Twice Baked Potatoes

I should have read all of the reviews before I cooked this. After the fact, I agree with several of the reviewers that this was WAY to spicy. The adults could handle it (uncomfortably) but the kids could not. Every member of the family went racing for their drinks after the first bite. Underneath the fire, the potatoes were acually very flavorful (how can you miss with all that butter, cheese, sour cream, and bacon). It was a shame, therefore, that the spice deterred the family from consuming more. I followed the recipe carefully, so I don't think the excess spice was my doing. I used what I thought were four average baking potatoes (2.59 pounds from the receipt). Perhaps the trick is to have four massive potatoes. Barring that, I would recommend cutting the red pepper at least in half. As the recipe stands, the average rating from y family was 2.3 stars.

Marinated Mushroom Salad

Overall, easy recipe that worked exactly as advertised. I though the taste was OK. It was actually more subtle than I expected. However, all of the kids rejected it outright. I think it was the tarragon they objected to. Because of this, the average rating for the family was only 2 stars.

Jo's Rosemary Bread

Good bread recipe, very similar to the bread served in Monty's Steakhouse in Tempe, Arizona. I do not have a bread machine, so I fixed the dough by hand as prescribed by another reviewer. Her directions worked well. At the end, I formed the dough into an oval loaf as directed. However, the oval spread out into a very thin loaf during the second rising. It still tasted great, but I will probably try to figure out how to make it a more normal loaf next time. The family only gave it 4.0 stars, but the entire loaf was gone by the next day.

Three Bean Salad I

Overall, an easy recipe to prepare. I thought it was pretty good, although there was a lot of sugar in the sauce (probably too much). I thought the sugar might entice the kids to enjoy some new vegetables, but I had no luck. The unanimously rejected it. So, it was an OK adult dish, but not passable as a kid dish.

Average recipe. The amount of spice/olive oil mix seemed too much for just two tortillas. Even with the heavy amount of mix, they were more bland than I had hoped.

Pumpkin Roll Cake

Overall, the cake recipe worked as advertised. I had trouble with the filling, however. I could not get it to whip up as fluffy as it seemed it was supposed to be. I had to substitute peanuts for the walnuts since one of my children is allergic to walnuts. Admittedly, this affected the taste. My family gave it an average rating of only 2.5 stars, but I think this wouldn't have changed much regardless of the nut topping. They were just not very enthusiastic about the pumkin flavor.

Mimi's Smoked Salmon Chowder

Overall, average recipe. I and two kids said it was OK, but the third wouldn't eat more than the first bite. I attempted to do a half recipe, which probably resulted in too long of a cooking time for the amounts. As such, it was pretty thick at the end. Nonetheless, I think it was probably close to the intended taste. The tarragon taste was relatively strong, and I think this was the biggest turn off.

Easy Strawberry Lemonade

Quick and easy. This was a hit with my two young girls. I bought whole frozen strawberries at the store, then thought that the recipe probably intended for frozen sliced (I sliced them after they partially thawed).

Parmesan Herb Bread

I did not have a breadmaker, so I followed the moxer/oven variation provided by another viewer. This recipe went exactly as described, and 30 minutes appeared to be the correct baking time after two risings. This is a wonderful bread, with the parmesan taste predominating. Therefore, the exact composition and balance of the spices probably does't matter that much.

Banana Crepes

Overall, good recipe that I enjoyed. However, mixed reviews from the family. My daughter loved it and my son hated it. This had a unique taste with the mix of cinnamon and bananas. But, after trying it once, you may decide to spend the time and your desert calories on more traditional dishes in the future. For me, I think I will fill these wonderful crepes with berries and cream next time.

Fluffy Whole Wheat Biscuits

Overall, good recipe. I followed the measurements exactly and found the dough to be extremely gooey. However, I rolled in enough extra flour on the cutting board to make it work. The biscuits looked perfect. My family of five voted an average score of 3.5. It is hard to convince my kids of the more healthy whole wheat when they are used to the traditional white flour taste.

Halibut with Creamy Garlic and Herb Sauce

Overall, no problems cooking the recipe. After reading other reviews, I cut the crushed red pepper to a teaspoon. Even so, the sauce was still very spicy. Additionally, as other reviewers have indicated, the tarragon taste is very strong and overpowers some of the other elements of the sauce. Both my wife and liked it but were not in love with it. All three kids however, completedly rejected it due to the fire in the sauce. Overall, then, the average score for our family was 1.8 stars.

Russian Vegetable Pie

Actually, I enjoyed the dish; but, I was the lone holdout in the family. My wife stated that whe thought something was missing. The kids all rejected it and opted for PBJs instead. The family's overall score, therefore, was 2.4 stars. The recipe was straightforward and I ran into no problems fixing it. Start to finish, it took about three hours to prepare.
