About this Cook
I'm a typical college student. When I first went away from home I had very little cooking skills, besides making pancakes and baking desserts. Of course I couldn't live off of that, so I began experimenting w/ simple recipes. Here I am in my senior year and I have learned to cook various meals. I love watching cooking shows! I have one fear in the kitchen however, and that is frying. I hate! hate! hate! when things start popping. :( I am working on it by starting with sauteing veggies and will slowly work my way up. Wish me luck! :D
My favorite things to cook
I love my oven. I bake/fry most of my food in it. It's also a lot healthier. I enjoy cooking fish and chicken. As far as types, I like Hispanic (not just Mexican, since my family is Honduran), Italian, and comfort food.
My favorite family cooking traditions
My mom makes a mean crab soup on special occasions. I need to get the recipe one day. ;) We also love to cook/eat plantains. For Thanksgiving and Christmas she goes all out and makes a typical meal. We get cake on Thanksgiving, unlike most people though, because my birthday is that week.
My cooking tragedies
About 2 years ago, I was trying to make shrimp scampi. I'd made it before, but usually had the bf around to actually cook the shrimp. This time, however, I was alone and starving! I tried cooking just a few of the shrimp and as soon as they started sizzling and popping the marinade everywhere I freaked out and turned the stove off. I then realized I was sweating from the fear. Needless to say, I eventually tried it again and luckily can make it on my own now.

Good Old Fashioned Pancakes
This recipe was amazing. My pancakes were really fluffy and delicious. I made it exactly as written, but it definitely made more than 8 pancakes. The only thing I wasn't too happy about was that the pancakes were a little more dense than I would have liked, but I will be making these again and again! Thanks for sharing. :)

Easy Pineapple Cake
Loved this cake and the frosting recipe was a good kick-off point. I made the cake recipe as written but used two 8-in round pans. At 30 mins they seemed a little bit overcooked but I added extra pineapple juice over each layer to kick it up a notch. Then for the frosting I added an extra half cup of powdered sugar, and took out the vanilla extract and added pineapple juice to taste and coconut flakes. My mom loved it for Mother's Day! Definitely will be making this again. Thanks for sharing the recipe. :)

Sturdy Whipped Cream Frosting
This frosting was delicious! I couldn't get enough of it. It made enough for 20+ cupcakes with some left over to eat with 2lbs of strawberries! I will definitely be keeping this recipe on hand. THANKS!!
