Downeast Maine Pumpkin Bread
This was delicious freshly baked, but HEAVENLY fresh out of the fridge for breakfast the next day, when the pumpkin and spices decided to kick in full force! I followed the recipe for the most part, but made a couple changes: -Used 1/2 cup oil 1/2 cup (unsweetened) applesauce - 1/2 cup brown sugar (would have used more, but that was all I had) and 2 1/2 cups white sugar -Added 1/2 tsp Cinnamon (I'm a cinnafreak) -1/2 tsp vanilla -1 1/2 cups of semi-sweet chocolate chips. I poured the batter into a 12-cupcake sheet and poured the rest into a 9x5(?) glass loaf pan. The muffins were done in about 40 minutes and almost 1 1/2 hours for the loaf. I will be making this every year at LEAST once a year! I only wish my husband liked pumpkin...

Taco Seasoning (without the chili powder)
Oh my gosh, this was fantastic!!!! Much better than our previous go to packet junk. My husband and toddlers think it's too spicy though (booo), so I think we'll cut back on the pepper flakes. It is so delicious though! For those who don't know, like us, we added water to the browned ground beef, then put 3 tbs. of the seasoning in and mixed it up. I'm going to have to make quite a few servings of this and fill up our jelly jar to use every week :)
