Black Bean Stuffed Peppers

Flavorful, easy and filling. We will be making this again. I did add 1 tsp of garlic, I used cheddar jack cheese instead of plain cheddar, plain petite diced tomatoes since the kids were eating and I also used frozen chopped spinach because that is what I had on hand. It was a nice alternative to regular stuffed peppers. My husband and 2 year old loved it and my 5 year old liked it after he got over the look of it. I used red and green peppers, I preferred the red and my son preferred the green peppers. Over all a great meal.

Chicken-Parmesan Bundles

This was so delicious and so easy to make, even my picky 4 year old loved it. The only thing I did different was mix the cream cheese, mozz cheese and spinach together in a food processor until nice and creamy and put a slice of asiago cheese in the middle before I rolled up the chicken. I served it with penne pasta and garlic bread. One of my new fave meals

Southwestern Roasted Corn Salad

This was very good. It started pouring rain as we got the grill going to I used steamed frozen instead of corn off of the cob. Next time I think I will use little more hot sauce. Wasn't a hit with the kids but the adults enjoyed it!

Slow Cooker Enchiladas

Very easy to make and heats up well the next day for my husbands lunch. I used chicken instead of beef and I also mixed in a can of red enchilada sauce in with the chicken to give it some more flavor instead of using the taco seasoning mix.

Beef and Noodles in Crockpot

This was good just a bit salty, next time I think I might skip the french onion soup. I used 2 lbs of stew meat, 2 cans of cream of mushroom soup and 1 can of french onion soup. I also added sauteed mushrooms at the end and served over rice with garlic green beans. Very filling and very easy to make. We will be making it again.

Mushroom and Spinach Ravioli with Chive Butter Sauce

The flavor of the filling was fantastic, I liked the little kick you get with the cayenne pepper. I am only giving it 4 stars because the dough was a pain to roll out (since I had to do it by hand) and I ended up quitting and getting won ton wrappers because I couldn't get the dough thin enough. I will make this again but not sure if I will attempt to make my own dough the next time around. I also used alfredo sauce instead of the chive butter sauce and it went well with it.

Seven Layer Tortilla Pie

So simple and full of flavor! I did add a couple things to the recipe but otherwise I wouldn't change it at all. I added black olives and green onion and also used a Mexican blend cheese instead of cheddar. My husband said it was one of the best things I have made, my 2 year old devoured it and this will be put into my cookbook. I served it with Spanish rice, sour cream and salsa.

Marilyn's Green Beans Italiano

Simple, easy and delicious. The only thing is I will do next time I make this is to add fresh garlic. My 5 year old who normally won't even touch green beans devoured them. Once I add the garlic I am sure this will be a 5 star recipe and I will be making it again.

Unstuffed Cabbage

I made this a couple times thinking maybe I did something wrong. The tomato soup taste was too strong and it didn't seem like the cabbage cooked enough. My husband requested that I do not make this again. I like the idea of it and might try again when he won't be home for dinner lol.

Vegetarian Chickpea Sandwich Filling

Pleasantly surprised. This was delicious! I only used about half of the dill and added and extra 1/2 tbsp. of mayo. Served it on toasted whole wheat bread with sliced cheddar cheese, lettuce and mustard. I will be making this again. My 2 year old kept asking for more bites.

Spicy Southwest Squash Casserole

Surprising. I was not expecting it to have so much flavor and it is filling. I read the other reviews and worried about it being too watery so I drained the liquid from the Rotel and I didn't add the salsa. I used Ritz crackers because that is all I had on hand and I also used red onion,I am glad I did. For me this filled a 9 x 13 pyrex dish not an 8 x 8. It is a bit spicy so my little guys didn't like it but I thought it was fantastic.

Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

Made these tonight and they were AMAZING! I don't like cake and I was making these for a friend but I had to try them simply because I love brownies. I took the advice from a couple of the reviews and used a piping bag for the brownies and I also used strawberry cake mix and vanilla frosting. What a yummy combination. We will be making them again. I only gave them 4 stars because the centers didn't cook all the way but that may have been my error of adding too much brownie batter. Next time I will add a little less and hope they come out better. We will be making these again soon.

Spinach Enchiladas

I will be honest I was a little worried this wouldn't be good despite good reviews but man was I surprised. The flavor is great (I did add onion powder, garlic powder and cumin to the cheese mixture) and even my picky 5 year old who won't normally eat anything green loved these. We will be making them again in my house.

Spicy Black Bean Cakes

Very good. I didn't have any jalapeno's so I used a can of green chili's and I was also out of bread crumbs so I just ran some crackers through the food processor. I did not precook the potatoes and I am happy I didn't, I think it would have made them too mushy. I also added extra lime juice to the sour cream. I will be making again but I think I will cook them on the stove top instead of in the broiler. The sour cream is a much have.

Spaghetti Squash I

This was so delicious! I added some fresh baby spinach and the feta was a perfect addition, it would not have been as good without it. Very easy to make and very filling, this is one of the recipes that will make it into the cook book. Even my husband who does not like any kind of squash had no problem devouring his entire plate.
