Cranberry Sauce

Never was a big cranberry sauce person until I had it fresh like this! I've made this recipe for Thanksgiving the past several years and really enjoy the difference that fresh cranberries makes!

Grandmother's Buttermilk Cornbread

Absolutely moist & delicious!! Now, if you prefer dry and non-sweet cornbread, this isn't for you. This is a deliciously moist cornbread and was a huge hit at last year's Halloween block party. :)

Zucchini Cornbread Casserole

Reviewed: Sep. 1, 2009
Excellent!! What a great way to get my family to eat (and enjoy) zucchini! I had no issues at all with this getting soggy, but I hand-grated it rather than using a food processor, which I'm guessing is why some people had issues with sogginess. I also grated it coarsely instead of finely. My 10yo daughter even liked it! And it was a nice lunch of leftovers the following day. :) I will definitely be making this one again.

Banana Sour Cream Bread

So yummy and moist! I made a couple of loaves -- one with pecans and one without -- for a weekend outing w/ 5 other families and it was a HUGE hit! Both of my kids (18 and 10) loved it as well. Will definitely be making it again.

Jalapeno Popper Spread

Reviewed: May 16, 2009
A definite favorite and crowd-pleaser!! I've made this numerous times and it's always a big hit. I love jalapenos and usually double or even triple the amount of jalapenos (hey, I'm a Texas gal and we love our spicy food! :) I've done this in both the microwave and oven. Both work great. I don't think you can mess this one up if you try. It's a winner!

Gloomy Day Smoothie

Delicious!! I used fresh clementine juice and it was fabulous! Will definitely be making again. (Will probably try frozen mango chunks next time too to make it a quicker and easier smoothie and hope it's still as tasty. :)

Lake McQueenies

Another family favorite for 40+ years! Both of my kids (16 & 8) love this and it can be made in minutes! And, with the availability of pre-shredded lettuce, pico, packaged guacamole, shredded cheese, this is a quick and easy meal that tastes like you went all out. :)

Broiled Tilapia Parmesan

Reviewed: Jun. 6, 2007
AWESOME!!! Finally a fish recipe that BOTH of my kids will eat!! My 8yo daughter kept saying "mmmmm... I like this chicken". LOL So that says quite a bit for it's mildness. :) The thing to remember w/ tilapia (that I learned the hard way) is to make sure that none of your fish overlaps or touches the other pieces or it will have a very strong fishy taste -- at least that's what happened to some of mine the first time I ever cooked tilapia. Only the parts that were touching or overlapping tasted that way, though. The rest was the normal, yummy, mild tilapia. GREAT RECIPE!!!!!! A definite family fave!!!

Easy Indian Style Okra

Reviewed: Mar. 12, 2007
I love okra, but this wasn't something I'd make again. I just wasn't particularly fond of the mixture of spices. Also, it was a bit slimy, which I wasn't expecting after reading other reviews.

Magic Cookie Bars I

Reviewed: Jan. 1, 2007
These were awesome! I made them for our New Year's Eve party last night and they were gone in an instant! I've had many similar versions but this one was so nice and moist and crumbly -- not at all hard or dry or sticky. This one is a keeper!

Roast Chicken with Rosemary

Reviewed: Feb. 11, 2006
This was a great basic recipe for roasting a chicken. I've made it a couple of times and it turned out excellent both times! Both times I rubbed some olive oil and/or butter over all the chicken, cooked it breast side down, and stuffed it w/ fresh rosemary, fresh garlic cloves, and onion. Once I added a cut up lemon, but I honestly couldn't tell any difference by adding the lemon. I added some celery once too which was good. This last time I peeled and quartered some potatoes, placed them around the chicken, added some quartered onions and butter on top of the potatoes, and baked them the entire time along with the chicken. No need to add chicken broth since there was plenty from cooking the chicken. The potatoes were excellent. I sprinkled a little bit of Lawry's seasoned salt over the chicken and potatoes, too. This is now one of our standard meals in our household. So easy and tasty!

Beautiful Salad

Reviewed: Dec. 28, 2005
My husband LOVED this salad, which really surprised me since I didn't expect him to like the mandarin oranges and cranberries so well!! But he's raved about it all week. I've made it twice now and I found it was MUCH better the second time because I tossed it and kind of coated it well with the dressing (I used Paul Newman's Balsamic Vinegar.) It wasn't nearly as good when it wasn't coated well and was a little dry. We'll definitely keep making this one!

California Chicken Spaghetti

Reviewed: Jan. 4, 2005
I might have given this 5 stars had I not had to dice 10 tomatoes... It had a little more prep work than I care to do. BUT my 14-year-old son who's fairly hard to please LOVED it. Finding recipes that he enjoys makes dicing those tomatoes worthwhile... LOL My hubby liked it but didn't rave. My 5-year-old wouldn't have touched it because of the spiciness, but I just washed some of the chicken off in water and she ate it just fine. I also really liked the addition of the feta cheese on top. I'm sure I'll be making this one again.

Dinah's Stuffed Mushrooms

Reviewed: Jan. 4, 2005
These are AWESOME!! I served these for our New Year's Eve party and they were a HUGE hit! Like the other reviewers have said, this recipe makes way more filling than for 20 mushrooms. I bought 40 good-sized mushrooms and could have filled a few more! I also cut out 2 to 3 tablespoons of butter after reading the other reviews. They were superb!! Thanks for a winner!!

German Sausage Chowder

Reviewed: Jan. 1, 2005
This was very good. I will definitely make it again. I think I used a little too much water in mine. I also got distracted by a visitor and cooked the potatoes and cabbage way too long. But it still turned out good. I definitely needed more than a pinch of salt. And the swiss cheese was a bit stringy, but I loved the flavor. Hubby enjoyed it too. GREAT cold weather meal!

Alyson's Broccoli Salad

Reviewed: Mar. 29, 2004
Delicious!!! This one was loved even by non-broccoli eaters!! ALL of them!! Just get them to try it. I'm not at all fond of raw broccoli, so I always barely steam the broccoli about 1 1/2 to 2 minutes first. I also used the real bacon in packages which saved so much time and mess. I thought 1 c. of sunflower seeds was WAY too much. Next time I'll cut those down to around 1/2 c. I had a ton left at the bottom of the bowl... This recipe is a big winner, though, and one I will definitely use often.

Becky's Chicken Salad

Reviewed: Mar. 29, 2004
Delicious!! My hubby raved over this! I used grilled chicken leftover from last night. I also followed suggestions from other reviewers and added a dash of onion powder and cayenne, used about 3/4 c. (instead of 1 c.) and used Cool Whip instead of whipping cream. We ate ours on Wheat Thins and Ritz crackers. YUMMY!!! My hubby mentioned that it would be great to serve to our friends as an appetizer too.
