This is the first time I've ever made a cake. It came out amazing! I used golden raisins since I prefer the taste, and based on other reviews I swapped 1/4 cup of the oil with applesauce. I topped the cake with the Cream Cheese frosting II from this site, and then I sprinkled walnuts on top to cut the rich taste a bit.
Really, this was perfect. Great taste, great moist consistency, and dense like a carrot cake should be. This will definitely be my go-to recipe for carrot cake. My boyfriend's ten year old son could barely wait for it to be done before he grabbed some.
