Quinoa Tabbouleh

Yummy and Vegan. Yay. This is the first time I actually enjoyed quinoa. I used a little too much cooking water and thus added a little whole wheat couscous to the mix and that really seemed to improve the overall texture. I changed up the veggies a bit, including sauteed onion, zucchini, yellow summer squash, cucumber, parsley, and tomatoes. reduced the salt for heart health. Added some extra spices like Mrs. Dash Blend, salt free Spike, Magic Seasoning Blend, ground celery, tj flower pepper, white pepper, garlic powder, a little real salt, and a little melting pot garlic and wine seasoning too. Sounds like a lot of seasoning but that is how I always cook. This recipe is Awesome starter dish for eating quinoa.

Quinoa and Black Beans

Seriously Yum. I added I little barley before the quinoa it gave the dish a touch of just right chewiness. Cooked in a Dutch oven. I added a few extra spices here and there. It is fantastic. I added two bags of frozen southern style veggies and made my first intentionally vegan main course dish. Okra is awesome with this awesome little recipe. two thumbs way up!! Perfect for lunch leftovers too.

Chicken Pot Pie IX

Nice inspiration for a great meal, you can easily make extra for two of three other meals. You can sneak in extra extra veggies with purees.(eggplant) I added low fat and heart healthy cream of mushroom cream of celery soups to the sauce. plenty of mrs. dash and other low sodium blends. subbed organic lower sodium veggie broth for the chicken broth. mixed frozen veggies plus fresh corn (cooked). 2 bags frozen organic 4 veggie blend from trader joes. baked the celery in oven with chicken. added mushrooms and red bell pepper. it was yummy. served with mashed potatoes. green beans would have been a nice side also. used all the pie crust for the top layer by rumpling the crust. and pierces inside the "wrinkles" combo of deep dish frozen pie crust and refrigerated. Try It. You'll Like It. We Did.

Creamy Dill Cucumber Toasties

used this as inspiration for lunch. yum yum. toasted baguette. used creamy cheese wedges and no fat sour cream and a touch mayo with Italian spices and mrs. dash (spice packets are way too salty to be healthy) and dry dill and added smoked salmon under cucumbers.
