Best Ever Muffins

These muffins were awesome! I used a little bit less sugar and flour (bc I ran out), and did the baking powder substitution wrong and they still came out great! I added probably more than 1 cup of defrosted strawberries that I coarsely chopped. I preheated the oven to 425 and when I put the muffins in I decreased the temp. to 400. They took about 15 minutes to bake in my oven.

Soft Sugar Cookies IV

They turned out nice and soft. They still turned out tasty even though I made them way too big (recipe only made 26 cookies) I rolled them into large balls before baking and then frosted them with the decorating frosting recipe.

Carrot Cake III

Moist & Flavorful! I made some of the popular changes too - 1/2 cup unsweetened applesauce for 1/2 cup of the oil, 1 cup brown sugar and 1 cup white sugar instead of 2 cups white sugar, and an extra teaspoon of vanilla. Unfortunately, I didn't get to try the frosting! Cooking lesson - label your containers. I accidentally used cake flour instead of powdered sugar so no go on the frosting.

Hearty Vegetable Lasagna

This was great! As a meat lover, I wasn't so sure about it, but was pleasantly surprised. However next time I might try adding a half pound of ground turkey along with a few other alterations such as making my own sauce and no boil noodles.

Dark Guinness® Brownies

Great recipe! Unlike a lot of recipes with alcohol, I could actually taste the beer in these brownies and the flavor wasn't overwhelming. Changes: I cut the sugar down by 1/4 cup (I generally do this in recipes); used Ghirardelli bittersweet chocolate chips instead of chopping 8 oz; and melted the chocolate in the microwave for 1 min, stirred, then 20 seconds more in the mic instead of the double boiler. Other than those changes, I followed the recipe exactly. Next time I will mix the semisweet chocolate chips in so that there can be gooey chocolate bits throughout.

Best Big, Fat, Chewy Chocolate Chip Cookie

Loved the way these turned out. I made it all in 1 bowl, was too lazy to dirty a bowl & the sifter lol (i hate doing dishes!!!) . I also used half chocolate chunks & half chocolate chips. MMM chocolately. The 1st batch I sprayed the pan w/ Pam & they turned out a little bit to flat/crisp on the edges for my taste so the next batches I didn't grease the pan. Lastly, I made the cookies a little bit smaller than called for. I scooped a good bit of dough w/ my tablespoon measurement. It made 2 dozen.

Sandy's Chocolate Cake

Moist chocolate cake that always turns out - I haven't tried the frosting but the cake is awesome. I like to add some instant coffee to the boiling water for a darker flavor. I've made 8 inch cakes, 9 inch cakes, and about 42 cupcakes with the recipe.

Crustless Spinach Quiche

This was really good! I tripled the recipe- 2 for work, 1 for the fam and they loved it. I used 8 cups of Mexican shredded cheese and about 1.5 cups of finely shredded 75% fat free sharp white cheddar. I drained the spinach using a colander and the back of a spoon to get most of the juice out. I also cooked the spinach with the onions. I was a little scared that I didn't dry the spinach enough and also the batter was really thick compared to other quiche batters I have made but it turned out great! My coworkers and family really enjoyed this recipe!

Cornbread Casserole

I've made this recipe many times and it is always a hit. Although it was fine as written, I generally like to halve the butter which makes it a little less greasy. I make mine in a glass 9 x 13 pan so it comes out on the thin side but I think I like it that way. I also like that it is firm enough to slice into squares.

The Best Vegetarian Chili in the World

Rainbow Pasta Salad II

Made this for a party & it was a big hit! I used Wishbone Italian salad dressing. I also added 8 oz. of shredded Italian cheese & 6 oz. pepperoni. I also used 5 Roma tomatoes instead of 2 large tomatoes. Thanks - I will definitely make this again!

Cheese Garlic Biscuits II

I love that this recipe doesn't use a baking mix. I used freshly shredded vermont extra sharp white cheddar. Results were amazing! It did take more like 15-20 minutes to bake. Next time I would probably decrease the oven temp to something like 400. I also sprinkled with paprika and parsley for color.

Whole Wheat Beer Bread

Loved this recipe! Very easy and the bread turned out very flavorful. I used Guinness Extra Stout and per other reviews topped my bread with 1/4 cup of melted butter before placing it in the oven. It baked for 50 minutes at 350 in a dark loaf pan.

Salsa Chicken Burrito Filling

Loved this! After reading the reviews, I used no sodium tomato sauce and reduced sodium taco seasoning. I also used an 8 oz can of tomato sauce since I couldn't find a 4 oz one. I mixed everything but the chicken together and poured it over the chicken. I made this in the crockpot.
