Mom's Zucchini Bread

I thought I had done something wrong after I added the flour mixture and it was thick like cookie dough. But once I added the zucchini (I used 3+ cups) it was just the right consistency. Yum!

Michelle's Coconut Chicken Curry

Good base. I added cayenne, sugar, lemon juice, potatoes (no cauliflower, ick) and next time I would use 1/3 less curry (it was too overpowering, lost the coconut taste).

Nick's Favorite Cherry Pecan Bread

I used fresh cherries because I had some that needed to be used. I was a little dissappointed with the lack of flavor in the recipe. I added a little almond extract, but it was still lacking. I probably won't make it again.

Cranberry Muffins

The only thing I would change about these yummy muffins is to chop some butter into the topping, so it is more like a crumb topping than just sugar. Very good!

Greek Pasta Salad I

Great recipe. I only had half the red wine vinegar, so I subbed Balsalmic for the other half- next time I will make an extra trip to the store if needed- the red wine vinegar would have been a little better. But, overall a very flavorful recipe. I recommend making at least the night before (it's even better the next day).

B.L.T. Salad with Basil Mayo Dressing

This salad was so good! It tasted just like the sandwich. The only thing I did differently was to use a frozen pre-made garlic bread, toasted and cut into cubes as the croutons. I put them on top of the salad after it was tossed so they wouldn't get soggy.

Slow Cooker Beef Stew II

This was a good, really easy recipe. I added a bit of Worteschire sauce and some garlic powder to the soup. Then I served it over egg noodles. I will certainly make this again when I know I won't have any time to make dinner!

Eggless Sweet Potato Casserole

I made this for Thanksgiving. I've never used sweet potatoes before (we always use yams). So this was my first, it was great. Pretty sweet, but that's the way I like it.

General Tsao's Chicken

This dish was really good, but ONLY with a few important alterations. First of all, no more than 1/4 cup cornstarch in the sauce (you could probably use less). I halved the amount of chicken but still made the full amount of sauce. This was still barely enough sauce. I breaded the chicken in a more traditional way. I marinated it in the soy sauce/egg mixture, then dropped it in a bag of flour to coat it. I also used crushed red pepper flakes instead of the chile peppers and eliminated the MSG. I will certainley make this recipe again though.

Arti-Cheesy Chicken

Yum, this one will leave you feeling like you need to go to the gym, but it's great. I used 2% milk instead of the heavy cream, which helped a bit. I also used mozzerella in addition to half the amount of feta.
