Brown Rice, Broccoli, Cheese and Walnut Surprise

I prepared myself for a somewhat bland meal when I was making this, but it was not bland at all. I did use salt and pepper s stated but that was the only seasoning. the dish had good flavor in my opinion. I would make this again.

Cola Sauerkraut

I give this 3 stars only because as another reviewer mentioned the cola take the bite or "sourness" out of the kraut. That was a disappointment as I do like that aspect of sauerkraut. It did not taste bad though. I would recommend this recipe to anyone who does not like the sauer in sauerkraut. I probably won't make it again this way, but at least I can say I tried it.

Peanut Butter and Banana French Toast

Made these this morning for Sunday breakfast. A nice variation on French toast. I can see why some reviewers said it was a bit too sweet. Not over the top sweet though. I did add some cinnamon sugar to the egg mixture. Oh and I used some milk too.

Texas Jambalaya

Good flavor. I changed a few things though. I only used smoked sausage (Hillshire farm hot smoked sausage). I thought about andouile, which I may try next time. I left out the celery and used red instead of green pepper, because in my opinion green peppers have no flavor. I used rotell mild diced tomatoes and bush's chili beans. Also substituted the chicken broth with 3/4 cup Sam Adam's Black Lager. I just like cooking with beer. :)

Made these tonight exactly as written. Wouldn't change a thing. Very good flavor and not too spicy for me. If you can't handle heat you might want to cut back on the peppers though.

Black Bean and Corn Quesadillas

Insanely Easy Vegetarian Chili

A little soupier than what I like in a chili, but it has good flavor. The only changes I made were leaving out the celery, cause I don't like it, and adding red pepper flakes and extra garlic and chili powder. Very healthy with all the veggies.

Barbeque Tempeh Sandwiches

First time I ever tried tempeh. This was really good. If you did not know there was no meat you would think this was a sloppy joe sandwich. I used Sweet Baby Ray's Sweet and Spicy BBQ sauce. I will be making this again!

Cheater's Enchiladas

This was just ok. It would have been very bland had I not used spicy enchilada sauce and a can of green chilies. I also added a layer of cheese on top. Won't make again.

Thai Curry Tofu

This was very good. However, next time I will use less cilantro as it was a bit overpowering for me. Also, I added 1/4 tsp. of red pepper flakes and 2 cups of stir fry veggies then served over rice.

Rae's Vegetarian Chili

Great vegetarian chili. Next time I will probably add 2 cans of kidney beans and leave the garbanzo beans out. They just seemed out of place in a chili. I like spice so I used 1/4 tsp. of hot sauce and 1/2 tsp. of red pepper flakes. I also used Guiness Black Lager. It just makes sense to use a dark beer in any kind of chili.

Excellent! I left out the tomatoes (not a fan) and added a can of corn. I made this last weekend for a Labor Day cookout and will make it again this weekend for a football party. Go Ravens!

Jamie's Cranberry Spinach Salad
