Chicken Parmesan

Best Chicken Parm...and I'm Italian!! The only thing I did differently was not to pound the chicken.. wasn't necessary as I already had a package of thin sliced chicken cutlets.. everything was prepared exactly as described.

Old Man's Turkey Noodle Soup

My family enjoys turkey noodle soup, but I rarely made it because I always made it with the turkey carcass. Now we can have turkey noodle soup anytime!!! This recipe was straightforward, easy to make, and the result was DELICIOUS!

BREAKSTONE'S Fruit-Filled Coffee Cake

Made this cake yesterday for our teachers' breakfast. I used a yellow cake mix and apple pie filling. Had to bake it 45 min. instead of the 35 as stated in the recipe. Made the icing and put it in a sandwich baggy, cut the tip off and drizzled it diagonally on the cake. It tasted wonderful and was perfect for breakfast/brunch. The presentation was beautiful too. This was the cake everyone loved and wanted the recipe.

Sweet Potato Cranberry Bake

Through the years, I have made many different sweet potato recipes, especially for the holidays. This recipe, is by far the best one yet! It has the PERFECT balance...not too sweet like many sweet potato recipes, and just the right amount of tartness. The orange juice also lends a refreshing taste. The only thing I added to this recipe was a little orange zest. This recipe will be part of my recipe collection!

Faye's Pulled Barbecue Pork

I used meaty country spareribs instead of the pork butt and Cattleman's Hickory Smoke BBQ Sauce. It came out GREAT!! Husband doesn't like BBQ sauce, so he took his share w/o the sauce as carnitas, and then I added the BBQ sauce for the rest of the family. Everyone loved it! A keeper for sure.

Zesty Three Bean Salad

This bean salad was super easy and very tasty. I also added a can of drained, cut string beans and a few diced scallions for extra flavor. Yum!

Blueberry Crumb Bars

Made these bars several times, most recently for a bridal shower and they were a big hit. I made a few changes in the recipe. I used real butter instead of the shortening and it made a HUGE difference in the taste. Delicious! Since fresh blueberries are not in season now, I used frozen Maine blueberries (very big bag for under $5.00) that were purchased in the freezer section at Costco.) I didn't thaw them, just used them directly from the bag and the bars came out fantastic. I made these bars several times and found that you have to bake them a bit longer to get them lightly browned on top..I baked them for 55 minutes. Also, when topping with the remaining crumbs, make sure you squeeze the crumb mixture in your hands to form the crumbs before sprinkling on the top.

Basic Ham and Bean Soup

I really liked this soup! It had wonderful flavor, but I did make some alterations. I found that 1 hour soaking with hot water wasn't quite enough, so I put the beans in a pot with water to cover them with an additional 2 more inches of water. Then BOIL the beans for 5 minutes, take off from heat, and then let them sit for 1 hour. DRAIN the bean water off..To the stockpot ADD 64 ounces of chicken stock, the beans and all the rest of the ingredients, though I used more celery, about 5 ribs of celery. I also pureed about 1/3 of the soup and added it back to the pot, before adding the diced ham pieces. I found this soup to be QUICK, FLAVORFUL and SATISFYING..
