Brooklyn Girl's Penne Arrabiata

A life saver! I was looking for an easy sauce for my whole wheat penne, and found this recipe. I made it without chicken (it was meatless night at my house) and I didn't have basil but parsley. I also used heirloom tomatoes 22 ounces and 6 oz of tomato sauce. So few natural ingredients and lots of flavor. My 3 year old, and husband both had seconds! Will make again with. Thanks for sharing.

Grilled Radishes

Am not a big fan of radishes but after buying some at the farmer's market I was looking for a new way to eat them. Am so glad I found this recipe. After reading the reviews I got inspired to make my version of this: I sauteed the radishes with a big red onion, juice of half a lemon, 5 small cloves of garlic, 1 tbs butter, and 1 tbs olive oil. Also I sauteed some other veggies (sans butter) in batches: sweet corn (off the cob), a red bell pepper, adamame- in the meantime I was making the quinoa on the side. Once the quinoa & veggies were cool, I mixed them in a big bowl. Then I added a vinaigrette (olive oil, salt, black pepper, and oregano). I served them on top of lettuce and on top put some slices of avocado. A complete dinner! My husband and my 22 months old loved it. Next time I'll try the radishes on burgers. Yum, yum. Thanks for the recipe, it was truly inspiring.

Spring Strawberry Spinach Salad

Made this last night, and it was really different and fresh kind of dressing. My 20 month old daughter and husband loved it. Will make it again. Although I had to do with the ingredients I had home. Instead of the sugar, I added 4 very ripe strawberries into the blended mix, and only added 1/2 tsp of sugar (next time will do without it). I didn't have white wine vinegar, so I used the juice of one lime. Also I used 1/4 tsp salt. Finally, I used 1/3 cup of extra virgin olive oil. for crunch I used cashews, and for more omega 3 added a whole avocado (cut into cubes). This salad tasted fresh, healthy and delish! I made this recipe twice. My first trial was a bit chewy (although some came out crunchy). My husband (whose sweet tooth can't be trusted) was delighted with the first attempt. My 2nd trial was "better"- I baked them (was feeling too guilty for having churros for the 2nd time in a week). I doubled the ingredients but only added 2 tbs of sugar. The reason for the 4 stars is because the recipe doesn't say how thick they should be (I have no churreria), for the churros to come out more crunchy and less chewy. I will try next time to add less oil as another reviewer noted and see if it helps with crunchiness. I had it with Chocolate a la taza (the thick Spanish chocolate served in all Spain). Mmmm, delicioso.
