Best Brownies

Reviewed: Mar. 29, 2015
Wonderful yummy brownies! I took some suggestions others posted. 1. Beat the eggs slightly before adding to the butter 2. I used 3/4 cup white sugar 1/4 cup brown 3. I used 1/8 tsp baking powder Instead of 1/4 tsp 4. I hand whisked the butter, eggs, sugar, vanilla. Then with a wooden spoon mixed in the flour, salt and baking powder. Did not over mix. Baked it for exactly 26 minutes. PERFECT! They were gone in ten minutes!

Baked Flan

Reviewed: Mar. 16, 2015
Awesome!!!!!!! I baked it in a Bundt pan next time will bake in pyres casserole, dish. Mit took longer than 50 min about 90 min. I sprayed the pan first, mixed the ingredients in my kitchen aid. Indont know if it's because I baked it in Bundt oan, but there didn't seem to be a lot of caramel on top. No biggie. Everyone loved it. So smooth and creamy, not eggy tasting. IHave another recipe that's calls formthenevaporated milk instead of the heavy cream. This one is better!

Golden Rum Cake

Reviewed: Nov. 28, 2014
I know this recipe as Puerto Rican rum cake. I've made it lots of times and it's a winner. To me it needs more rum sauce but I make it as is. If you've ever had the Tortuga Rum Cake (YUMMY) I think it has less rum than that one. I've had Irish whiskey cake and to me that has a lot of liquor but oh so good! After I bake it I leave in pan poke holes and pour most of the sauce in the holes so it CAN BE ABSORBED IN THE CAKE. Once cooled I flip it onto plate and pour the rest on top. Delish Ps. I used butter instead of oil.

Sinfully Delicious Chocolate Pie

Reviewed: Nov. 8, 2014
This was my change. I bought bittersweet instead of unsweetened. I couldn't remember what type of chocolate the recipe called for. Being that it was bittersweet chocolate I cut the sugar from 1.5 cups to just 1 cup. I used regular organic sugar and did not *extra fine* it. I beat each egg for 5 minutes. It was not gritty at all. My daughter calls this Chocolate Crack Pie. I had French Silk Pie from a cookbook I had years ago and it is still my favorite pie.

Brown Sugar Pound Cake I

Reviewed: Dec. 26, 2009
I left out the pecans and added a dash of cinnamon. The cake came out very, very nice. When warm, my husband said it tastes like a pancake. It tasted very good, the brown sugar was subtle. I thought it needed a little something..maybe a little salt? I would definitely make this agian.

Buttermilk Pie III

Reviewed: Dec. 25, 2008
very good!!! i had never had buttermilk pie before and decided to try this one. everyone loved it! I did increase the flour from 3 tsp. to 2 tablespoons and it set up wonderfully! I also covered the edges of the pie crust with foil before baking to prevent it from browning too much.

Rolled Buttercream Fondant

Reviewed: Feb. 17, 2008
the first time i made it i did add about a tablespoon of butter to it.., gave it more of a buttercream flavor. the recipe i have calls for 1/4 tsp lemon oil and 1/4 tsp orange oil instead of the butter and vanilla extracts, but you can use any flavoring the trick is rolling it out between vinyl sheets like the kind you get at a fabric store steve stellingwerf demoed this and he said it does break apart if rolled to thin..hope this helps
