Made the recipe with all the alterations, was very pleased with the end results, I used 4 eggs, 1cup of Canola oil, one cup of white sugar and one cup brown sugar, 3 teastoons of pure organic vanilla extract, 2cups of all-purpose flour, 2 teaspoons of baking soda, 2 teaspoons baking powder, 1/2 teaspoon salt, 3 teaspoons of fresh ground cinnamon, 3 cups of graded carrots, 1 cup chopped pecans, 1 8oz can of crushed pineapple with most the juice strained out and set aside 1/4 cup of the juice to add in when mixing the ingridients, all so added 1/4 fresh ground nutmeg and 1/2 a cup of rasins. the frosting seemed to need to much confectioners sugar for my liking so i only added 2 1/2 cups. Folded in the graded carrots and raisans and pecans, baked at 325 degrees F, in two 9x1.5 in round pans greased the up but forgot to flour then up >.
