Black-Eyed Pea Dip
Great recipe! I subbed Rotel tomatoes for the fresh tomatoes. Also added a can of corn. A keeper.....and not just for New Years!

One Bowl Brownies
A great recipe indeed! Used 3/4 c cocoa powder and 3T veg oil with remaining recipe ingredients (except nuts)! Baked for 27 mins in 9 x 13 glass pan lined with baking paper. EASY to take out of pan. Once cool, place brownies on cutting board and slice away! This is my go-to recipe when I need to take something to a gathering in which I need to bring a dish to share. All ingredients are staples in my house. Topped with powdered sugar. (For nicer uniform presentation on a platter, trim off the crusty edges and enjoy eating them yourself!)

Caramel Popcorn
This was great! I used half the butter called for in the recipe and ended up popping more popcorn. I wanted the popcorn to be in individual pieces, so I didn't completely coat the popcorn with the syrup (thus the additional need for more popcorn to be popped). I didn't have to break it apart....and there was plenty of flavor without the popcorn being 100% coated. Placed a portion of the popcorn in a large stockpot (sprayed with cooking spray), drizzled syrup, stirred. Then added more popcorn, drizzled syrup, stirred, repeating until all popcorn was used. This made for easy distribution of the syrup. Baked for 45 mins in pans lined with baking paper for easy clean up. Thank you for this recipe! Move over Cracker Jacks! :-)
