Classic Spanish Sangria

This is a fabulous recipe!! I have shared with many friends. It was easy to make, and everyone enjoyed it. Careful though. It tastes like fruit juice, but you feel the effects of the alcohol later. Great to make for large parties.

Baingan Bharta (Eggplant Curry)

Easy recipe. The eggplant was very mushy after being baked for 20 minutes. The actual dish was very tasty. I added the yogurt to the curry after it was cooked and slightly cooled. I would make it again only I would do it with two eggplants to add more "meat" to the final dish.

Antojitos Minis

Very tasty!! First, we tried the filling without adding the cheese into the mixture, and only on top, but that didn't work well. The cheese is needed in the mix to bind everything together while baking. The frustrating part was how to cut the tortillas so they will fit perfectly into the cupcake pan. I finally just cut them into triangles, and that worked OK. The first batch, I added the salsa into the mix, but that made it too watery; so in the second batch, I only added some tobasco sauce to make it a bit spicy, then served the salsa on the side. And everyone liked that better. Easy to make, and even with greasing the pan, some of the tortilla cups still stuck to the pan because of the melted cheese, but this is minor compared to the taste. Will probably make again, and we liked how you can change the filling (more black beans, more veggies, and less cheese), and still it tasted good.

Easy Veggie Samosas

Wonderful recipe!! Have made it several times. Sometimes, I make just the filling, and serve it with warm wheat or jalapeno tortillas. Everyone who has tried it has liked it.

Absolutely the Best Nacho Dip Ever

Very easy recipe. It was made for a school Spanish class party by my daughter; everyone, she said, loved the dip!!! She forgot to include the layer of green bell pepper; but she said no one missed it. I think it needed the crunch of the bell pepper. I also don't think it needs the mayo. The cocktail sauce gave it a nice zing. Next time, I am going to mix cream cheese and sour cream with some chopped cilantro; skip the mayo. Definitely will use a spicier cocktail sauce and salsa. The cucumbers were a very nice touch. Used multigran tortilla chips to eat with dip. This recipe is a keeper!!! We will make it again, with a little tweaking.

Sesame Strawberry Spinach Salad

I cut down the amount of sugar by half in the dressing. Even though I tripled the amount of spinach and used twice the amount of strawberries, added string red onions, there was still lots of dressing left over. Everyone loved it, all the salad was gone, next time, will add more spinach and more berries.

Spicy Black and Red Bean Soup

Easy recipe; family enjoyed it. Makes enough for two dinners for family of four. Couldn't find frozen shoepeg corn, so used regular frozen corn, and served with warm tortillas, and topped soup with shredded cheese. Tasty!!

White Chocolate Snack Mix

Three packets of white chocolate chips should be used; two packets coats everything OK, but not great. And use a shallow and big bowl; deep bowl makes it hard to coat melted chocolate into items on very bottom. And it took four 10 second microwave heatings to melt the chocolate into a smooth mixture.

Roasted Vegetable Ziti Bake

It was a bit laborious to make; ran out of sauce before both casserole dishes were layered with all the ingreds. Had to add some store bought sauce to keep the dish moist, I would also recommed a smaller size pasta, the regular ziti was too big for the layering. This would work also in a large lasagna pan layered as recipe suggests. I substituted basil for the thyme, didn't have any, and added extra pepper flakes and some chilli powder to make the sauce have a bit more zing. I also recommend prepping this dish a day earlier, this gave time for all the flavors to mesh well, tasted great!!! I did make the dish in one big lasagna pan, prepped it a day early, and it worked out really well.

Spinach Mushroom Quiche

Used frozen deep dish 9-inch pie crust, thawed at room temp. Baking took 45 minutes. Next time, I will place crust with mixture on a preheated cookie sheet and bake like my other quiche recipes recommend. Otherwise, the outside pie crust edges browned very quickly. Easy to make. Used frozen 9-oz. spinach, thawed, cooked three minutes in microwave. Used pre-sliced mushrooms, since time was a factor for me.

Chocolate Pretzel Rings

Yummy!!! So easy. Made about 80 pieces. As other reviewers noted, cannot find round pretzel rings. Used square ones, with hershey kisses and M&Ms. My daughter made them as teacher gifts, she really enjoyed making them. We did have to cool them about 30 mins. in fridge;could be due to the day being very humid and hot. Might have affected kitchen temp. When my daughter brought the few remaining pieces home from her school party, the chocolate was still firm and the M&Ms stayed in place. I think this was due to the extra firming time in the fridge. Thanks for sharing this recipe. Will look for the ring pretzels closer to holidays; they may be available then.

Vegetarian Baked Pasta

Very delicious! I also cut down the Gorgonzola to 4oz. and mixed 4oz of Asiago cheese to it. This mixture tasted really good in the final product. I also only used about 2 1/2 cups of mozzarella, 4 cups was too much. I sprinkled the top with the Asiago cheese I had left over after the layering. A huge hit at my dinner party.

Cassie's Zucchini Brownies

Added choc. chips to the dough before baking. The brownies are just OK. It tastes more like chocolate zucchini bread, than a rich brownie. Probably will not make again.

Lemon Yogurt Muffins

Easy recipe to make, made dozen nice size muffins, but the muffins were a bit dry. Added some poppy seeds since my family likes the lemon and poppy seed combo. OK muffins, not Wow!

Extra Easy Hummus

Panzanella Salad

It was easy to make, I will agree that garlic buttered croutons will be just fine; no need to make croutons unless you have some stale bread that needs to be used. I might try it with saltier cheese next time; the mozzarella was a bit bland for my taste. Easy to do and I did use six tomatoes, gave more bulk and depth to the salad.
