Louisiana Crawfish Etouffee

Reviewed: Jun. 26, 2014
I agree great basic recipe, only because i tweaked to my taste buds. 1)instead of water use chicken broth 2)i used swai fish fillets (cut into bite sized pieces and shrimp) 3) season seafood with salt,garlic/onion powders, oregano, basil, cayenne, crushed red pepper flakes, chipoltle chilli pepper,a dash of old bay, celery seed, tumeric, & a dash of chilli powder. 4) i sautéed some frozen green bell peppers with the onions. Also instead of seasoning the base with cajun seasoning(i don't use it AT ALL) i seasoned it with a little salt, small dash of celery seed and a dash of cayenne. WIth these modification a solid 5. Also to the rice i added parsley flakes for color.

Chicken Chimi in the Oven

Reviewed: May 17, 2014
This was a really yummy recipe however i did make a few modifications and also three different kinds. 1)instead of refried beans i used roasted garlic hummus, 2) due to lack of tortillas i used the burrito sized tortillas cut in half and folded like mini triangles, 3) i added bacon to one tray of these and bbq sauce to the other tray. They came out wonderful served w/sour cream and homemade guacamole DELISH! side note:for the shredded chicken i brought water to a rolling boil, seasoned chicken breast w/salt&pepper coated with 2 teaspoons of veggie oil and also seasoned the water w/garlic&onion powder, salt&pepper & cumin as well, reduced water to a simmer dropped the chicken in and let simmer for about 45 minutes then shredded, chicken came out moist.

Chewy Brownie Cookies

Reviewed: Sep. 12, 2012
i wanted brownies and cookies and i ran across this recipe. i ran out of semi sweet chocolate chips so i substituted with white chocolate chips yummy yum turned out great. some people had dry batter mines came out just right. the key is to incorporate the flour a little at a time. i think i've found a new favorite cookie

Catfish Cakes

i made these for dinner and my husband (usually picky about onions) gobbled these up. A few changes i made....i boiled the fish with a lemon and a bay leaf. also i chopped the onions then pressed them in a garlic press. also instead of crackers i buttered four pieces of white bread and toasted on both sides in the oven (because i didn't have crackers on hand). also i used regular cajun seasoning because i didn't have old bay. i also dredged the cakes in flour to give the extra crisp and hold them together better
