Fruit Dip V

This dip had an odd texture and consistency when I followed the directions. It was the color and consistency of deviled egg filling. Maybe it's because I used full fat ingredients and most people did not. I corrected the problem by doubling the sour cream and doubling (probably ended up tripling)the yogurt and adding skim milk. I also had to use the blender to smooth it out. Once I made these corrections, it tasted good. I used it with apples and grapes.

Buttery Cooked Carrots

These were good, just a little too sweet for my taste buds. I took the advise of some other reviewers and steamed the baby carrots and then melted the butter in the microwave.

Roasted Garlic Mashed Potatoes

This recipe was great! You may need to change the milk, butter, and garlic amounts to suit your taste. Personally I added quite a bit more garlic, but I am addicted to it!

Peanut Butter Pie VIII

I really liked this recipe although it wasn't what I was expecting. It's more of a peanut butter custard pie. I would have given it 5 stars, but neither my husband or son were very crazy about it. So, I gave it an average combined score of 4 stars.

Award Winning Soft Chocolate Chip Cookies

These were wonderful. I didn't think I would find another chocolate chip recipe that my family would like better than the Toll House recipe on this site, but we did. I followed the recipe exactly, except that I made a half batch. The only thing I will change next time is that I will use less chocolate chips. I will probably use 1/2 to 3/4 the amount that the recipe calls for. Hint: If you like flat cookies, use parchment paper or "smoosh" the dough onto the cookie sheet.

Gorgonzola Salad

This was an excellent salad. The changes I made: used approximately 2 tablespoons of red wine vinegar, increased garlic to 5 cloves (our family loves garlic), and chose to use romaine lettuce. This was a huge hit at the dinner table. Usually my family is not asking for seconds on salad.

Michelle's Peanut Butter Marbled Brownies

I made these one night when I was having a chocolate craving. Boy did they hit the spot! Rich and moist. I thoroughly enjoyed this recipe. I only changed one thing: rather than using the semisweet chocolate, I substituted milk chocolate.

Quick and Easy Alfredo Sauce

This recipe was great. It was definitely "quick and easy". My husband also really liked it, although my 8 year old wasn't wild about the sauce. I did make a few changes: I used real garlic, light garlic cream cheese, 1/2 teaspoon of Italian seasoning and substituted 1 cup of the milk for fat free half and half. I also added 1 pound of medium shrimp.

Beef Tenderloin With Roasted Shallots

This was the best red meat recipe I have ever tried. The only change I made was that I roasted mushrooms instead of the shallots. I felt like I was sitting down to an expensive dinner at a fine restaurant. (Except that I could see all of the dirty dishes in the kitchen out of the corner of my eye.) It does take some time to prepare, but worth every minute. I served it with garlic green beans and mashed potatoes. The excess gravy was wonderful over the potatoes. Thank you Christine!!

Good Old Fashioned Pancakes

I really liked these pancakes. Like others, I omitted the salt and added vanilla extract. I also substituted condenced milk for 1/2 of the milk the recipe called for. So good!

Black Bean and Salsa Soup

This soup was wonderful! I did make a few changes: I used chicken broth vs. vegetable broth. I used homemade salsa that was heavy with garlic and cilantro. I didn't have enough black beans, so I added about 1/4 cup refried beans. I followed the advise of some other reviews and left some black beans whole. I also added cayenne and sauteed chopped onion to the bean mixture. To make it a heartier meal, I added 1-1/2 cup rice and 1/2 cp corn to the soup. I can't wait to make this again!

Tortillas I

This was my first attempt at making homemade tortillas and the recipe was great! They came out a little floury, but I think that was because I used too much flour during the rolling process. I do agree with some of the other reviewers who said that they didn't need cooked quite so long. I probably cooked the tortilla for 30-45 seconds on each side and that was perfect. Thank you for this great recipe!

Chicken and Garlic

This was a good recipe. The second time I made it I doubled the garlic and caramelized the lime so I could drizzle it over the chichen just before serving. To caramelize the lime: remove chicken from skillet and add approximately 2 tablespoons sugar and the lime juice. (I used 4 tablespoons lime juice.) Heat at medium, while stirring until sugar has dissolved. Then raise the heat and allow to bubble for 2 minutes. Yum!
