Latin-Inspired Spicy Cream Chicken Stew

I have made this recipe multiple of times .. however, I add an extra chicken breast, an extra can of the diced tomatoes (all low-sodium), an extra can of corn (will be switching to frozen corn after this however), an extra can of bean (Low-sodium, as well, however, depending upon whether my daughter is included pinto or black beans as she is allergic to black beans), up the taco seasoning to 1.5 packages .. (plan on making my own after I run out of the packages I have on hand, although I use low-sodium). 1.5 Tablesppons of fresh cilantro and 1.5 packages (12 oz) of cream cheese. It serves 10 easily this way ... seems like the magic number over here .. would probably serve 12 if some are small children. Serve with Sour cream, green onions, tortilla chips, & greated cheese .... recipe is always requested ... that makes it a hit in my book!

Turkey Ragu with Fontina and Parmesan

My family loved this in fact my son-in-law had 3rds and my husband would have loved to have had 2nds but with his health risks he was limited to only 1 serving. I changed it up a bit, I used .. ground chicken, fresh herbs, low sugar canned tomatos, and substituted the Parmesean for the real thing and used Parmigiano Reggianno ... also decided to change up the Pasta a bit to make it more interesting for our granddaughters and used campanella pasta ... plus I added in a ladle full of the pasta water to bind it all together at the end ... will definitely be making this a regular as requested!

Honey Glazed Ham

This was a real hit with our family of 8 this Easter ... even with my son-in-law who doesn't like ham stated it was the best ham he ever ate and had thirds. It was delicious. Now, as my husband is diabetic although we are not as careful on holidays as we should be as he we watch his numbers we just substituted the corn syrup for 3/4 cup of Splenda Brown Sugar. I tented the ham for the first part of the cooking ... my ham was a lot larger (cooked it for 20 minutes per lb as it was a pre-cooked spiral ham). Then the last hour and a half I took off the foil and basted the ham liberally with the sauce every 15 minutes. I didn't broil it at the end as it didn't appear to need it. Let it rest for about 5-10 minutes after I pulled it out of the oven and everyone was thrilled from seniors to toddlers! This will be the ONLY ham we serve from now on! Loved it and so simple too!
