Egyptian Feta Cheese Omelet Roll

I added fresh basil and oregano to the feta mixture. I made this for a light dinner (2 egg omelet) with a salad and glass of wine. Very good!

Oatmeal Chocolate Chip Cookies I

I followed some of the recommendations from earlier reviewers and used 1/2 cup of whole wheat flour, 1/2 cup of butter and 1/2 of shortening, and added 1 tsp each of cinnamon and vanilla. The batter tasted AMAZING, but the cookies spread so thin and flat that I couldn't even lift some of them off the cookie sheet without them falling apart. I started by following some recommendations and baked them for 10 minutes, then took them out and left them on the tray for a few more minutes, but many of the cookies were still uncooked in the middle several minutes later. I ended up putting them back in for a few more minutes of baking. I will serve some of the less ugly cookies to my guests today and save the uglier ones for my family (they still taste fine!). I guess I will have to keep looking for a dense, chewy cookie recipe.

Ginger Glazed Mahi Mahi

Wow - this was fantastic! I was looking for a fish recipe and was trying to break out of my salmon rut, so I thought I'd try this recipe. It was really easy (the most complicated part was the marinade!) and tasted like something you would eat at a fancy Chinese restaurant. The flavors in the sauce itself and with the addition of the fish are great - I highly recommend this recipe! I'm reviewing again because we've eaten this a couple of times lately and it is just fantastic. I've been using tilapia because it's cheaper, easier to find, and better for you, and it works out great. I have served it twice with sweet potato fries - somehow the flavors work really well together, and the sauce is so yummy I dip the fries in it!

Florentine Artichoke Dip

This was GREAT - I made it for a party, and it went over really well. I followed some other suggestions and decreased the parmesan and added some shredded Monterey Jack, which made it a little richer and gooeier. I even thought it was good before I baked it! I would definitely make this again - I served it with Tostitos Scoops chips.

Breaded Parmesan Chicken

This recipe was fantastic - I just finished eating the leftovers for lunch! I served the chicken with angel hair pasta and spaghetti sauce, and put some of the sauce on top of the chicken. My boyfriend loved it, too. I highly recommend this as an easy and incredibly tasty meal!

Creamy Chicken Lasagna

This was a little too rich for me (and I usually love rich foods!), but I made it for a family gathering and everyone loved it -- adults and kids alike. Even the pickiest kids loved it, so I might try making it again.

Baked Sesame Chicken

This was so good that my boyfriend asked me to make it again a week after the first time we had it! I made a few modifications, based in part on what others had said. It was really salty the first time, even though I used some teriyaki in addition to the soy sauce. The second time I used more teriyaki than soy, and added a bit of maple syrup and it was fantastic! I added some more teriyaki and syrup when I basted, too, because there isn't enough liquid to baste it fully. I served it with steamed broccoli and couscous -- yum!!!

Better Than Sex Cake II

This recipe is FANTASTIC and was a HUGE hit at Thanksgiving! It just gets better day after day and the caramel and condensed milk make it incredibly moist. I took another reviewer's suggestion and poked holes in the cake with the handle of a wooden spoon and poured the caramel mixture in the holes. Next time I'm going to try a cake mix with pudding in it! Mmmmm, I can't wait!

Smoked Salmon Spread

This recipe was great, although I had to add *a lot* of garlic and extra dill to give it some flavor other than the cream cheese and salmon. I brought it to a work function, and my boss just asked me for the recipe!!
