Oh man. Is it possible for a cookie to be TOO good? Because these might be. So fast and easy to put together, so delicate and delicious, so difficult to stop eating! Go make them already!!

Big Soft Ginger Cookies

I've made these several time, and adore them! I don't like the crunchiness of ginger snaps, but love the flavor, so these are perfect! Delicious, easy, and so pretty when they're finished!

Absolutely Perfect Palak Paneer

My husband said this was good, so i'll give it a reluctant 3 stars, but I really didn't care for it. VERY bland...I've never made palak paneer before, and was excited to find a simple version of it, but I'll put in the time for the real thing next time. Not enough flavor, and the flavor and texture of the ricotta were just not right.

Banana Oat Muffins

I'm eating my second one right now--so delicious and light! Made the recipe pretty much as written, except for a couple subs for things I don't have(Silk instead of milk, brown sugar instead of white etc.) and they're awesome. The batter seemed a little runny when I was done mixing, but I didn't add anything and I'm glad! They're very moist and fluffy!

Whole Grain Breakfast Cookies

These taste really good, and made my house smell AMAZING! My only problem is that mine turned out sort of crumbly--they're not staying together very well. I did like another review suggested and smashed them down a little when they came out of the oven, and it helped to let them cool on the cookie sheet for a little bit, but they're still crumbly. Don't know where I went wrong, but they still taste great!

Seven Layer Tortilla Pie

So easy, fun, and yummy! My husband barely swallowed his first bite before saying "wow, this is really good! You need to make this next time we have someone over!" I substituted a can of corn for a can of the pinto beans, and added some cumin to a few of the layers. Next time I will probably throw in a chopped jalapeƱo to add a little heat, at the request of my hubby. :-) highly recommend!
