Mushroom Pie

Made it yesterday. It's good but a little bland. We used a couple extra slices of bacon and substituted Jarlsburg for the Swiss. Also added some ground cayenne pepper to perk it up. Oddly enough, the leftovers were pretty decent for breakfast. Still, every time I take a bite, it makes me want a piece of apple strudel instead.

Sugar Free Eggnog

This is really good, considering that it's OK for people who need to lose weight and/or are diabetic. But here's an important thing. The pudding tends to settle to the bottom of the pitcher no matter how hard you whisk it. To avoid that, put two cups of the milk in a blender and slowly add the pudding mix. Blend it like crazy until it gets a little frothy. Then add it to the other three cups. That will eliminate most of the lumps and silt on the bottom. And use real rum. Cruzan is aged, very good, and affordable.

Jersey Fresh Tomato Soup

This is pretty good but not quite as flavorful as I expected. But I fixed it, at least to my taste, by adding about 2 Tbsp of beef "Better than Bullion" and a Tsp of smoked paprika. That put it over the top.

Hominy and Cheese Casserole

Highly recommended. As a couple reviewers mentioned, it's a little bland, so we doubled the chilies. We also added more cheese after baking, broiled it for a couple minutes to brown it on top, and sprinkled it with bacon bits. Very nice that way. It might also be good to mix in some pearl onions or jalapeños before baking. We would serve it to guests, which is the standard around here.

Lentil Soup

How anyone could give this a high rating is a mystery to me. I followed the recipe completely, and it had almost no flavor--kind of like highly diluted salt-free ketchup. I added a scoop of beef Better than Bouillon, which helped a little. A bunch of seasoned croutons on top made it edible but still not good. My wife and I managed to eat one bowl apiece.
