Portuguese Chicken I

This dish..though I was a little hesitant at first...came out fantastic! For those of you who did not use bone-in with skin, you are certainly not getting the full effect. I used 5 garlic cloves when cooking the chicken, and did not have a lid for the skillet I used, so I had to use tin foil...never have I cooked a more juicy, perfect piece of chicken...it was to die for. After removing the chicken (mine only needed 30 mins), I sprinkled a bit of garlic salt and cracked pepper over the mixture before adding the cream...and I didn't quite boil down to 1 1/2 C, I just used a bit more heavy cream and a little more patience (I would advise you use at least 2 cups of the liquid anyway, you might need the extra gravy..why not? You're already consuming most of your caloric intake for the day!). This dish does take awhile to complete. I served this over homemade garlic mashed potatoes and I don't know what could be more fitting, but if you're more of a rice person, I'm sure its just as great with the sauce. If your sauce is runny, like alot of people have mentioned, I would highly advise that when its at a point that its coating your spoon adequately, take the pan off, remove the chicken and set the pan aside for about 10 mins...the sauce will thicken upon standing. Broccoli Chicken Divan

This was my favorite dish that my mother, who passed away when I was 17, ever used to make for us. I never could find her recipe! So, this one looked promising, but when I first made it, following this recipe exactly, it turned out a little bland (reason for the 3 star rating). I took the advice of some other reviewers and tried this again, but cooked the chicken with minced garlic, generous garlic salt, rather than garlic powder, and fresh cracked pepper. Delicious! The soup I chose was Cream of Chicken and Mushroom (but I think most cooking soups would work...I would, however, avoid the Cream of Broccoli and vouch for something more flavorful.) and I mixed that with the milk and a little less than 1/3 C sour cream, as well as 1/2 cup cheese. I then sprinkled a bit more cracked pepper on top of the mixture, followed by a bit more cheese, and was not shy at all with the breadcrumbs (use Parmesan!), which I recommend a double dose of! This turned out FANTASTIC...just like my mom's - along with a few easily made changes, this is a great dish worth trying. I will double the recipe next time. Wish I had more leftovers!

Slow Cooker Mashed Potatoes

I made these for a work Thanksgiving gathering and since I work at 8am and the luncheon wasn't held until 12pm, this recipe could not have been more convenient! I refrigerated the potatoes overnight, then placed them in a slow cooker on my desk until lunch...they were absolutely awesome and I'm glad I was one of the first in line, because rumor has it that these had completely disappeared before the 10th person in line made it up!! I did use the garlic cream cheese, so I omitted the garlic when cooking. Also, I did NOT place a terry cloth over the slow cooker, as I personally didn't mind a little extra moisture - I figured it may even keep the potatoes from drying out. I will be making these again for Christmas dinner on Friday night, and I think rather than salt that I will add a pinch of garlic salt for a little extra flavor, as well as green onion, which I think will go excellent with these. Thanks BWAYE for a great recipe!

Double Chocolate Brownie Cake

I made this in September for my boyfriend's birthday and it turned out excellent - as you can see in my picture, I decorated it with chocolate syrup and walnuts in syrup ice cream topping, as these are sticky and will stay put! (just be careful to let them drip a bit before placing them on the cake, as the syrup they're in will run...unless of course you like that!) The only thing I would tweak the next time would be to omit 1/2 cup of the choc chips...I think that took the cake juuuuust over the "too rich" threshold...Either way, thanks for a great recipe!

Oatmeal Chip Cookies

I baked these for the guys at work, following the recipe exactly, and they were absolutely fantastic. I would definitely say to those who used the quick oats to try them again with the regular oats for more texture. To the few people that actually said these didn't turn out, I would blame that on operator error :) Excellent recipe! Thanks!!
