The Best Red Enchilada Sauce
This was very good! Thanks for a simple tasty recipe. I did need to add a tiny bit of sugar at the end to help pull the "can" flavor out of the tomato paste, so I think next time I will cook the paste a bit before putting the rest of the ingredients into the sauce pan with it and then whisk it together.

Bok Choy Beef Soup
This was a really tasty base! As the submitter states, it is nice to add a bit to it, extra chili paste some lime, etc. Nice with noodles also. I did need to cook mine a bit longer than stated to get my bok choy soft, so you may want to plan for that when making or chop your bok choy stems pretty thin (I used the leaves and the stems, the recipe may have intended only the leaves at that cooking time).

Perfect Baked Jerk Chicken
My family really liked this chicken! It was not at all spicy - I might add a little extra kick next time I make it, but it was pretty clear in the description that it wasn't meant to be "spicy" I used 5 chicken leg quarters cut into legs and thighs in the recipe because that is what I had and the cook time was perfect. Thanks for a new family staple.
