Jambalaya Casserole

My dinner guests gave it 5 out of 5 stars. I thought it was good too, but would cut the rice down by 1 cup next time and add shrimp and a few crumbled strips of bacon. This recipe has been requested again and we just had it last night! TIP- do ur prep work (chop,mince,dice) the night before. It took me forever!!

Delicious Ham and Potato Soup

Skillet Chicken Cordon Bleu

A great standby for a weekday dinner. I added parsley, fresh garlic, onion, & red & blk pepper. Without adding your own seasonings it would definitely be bland. I didn't have the wine so substituted with milk. I added about 1.5 cups of milk throughout the process as this dish does not have much sauce to it when made as written.

Barbecued Beef

I made this recipe as directed minus the liquid smoke & I trimmed off all the fat before searing. I think the liquid smoke would have made the sauce more appropriate for beef, but without it (& maybe with it) we (5 adults) all agreed this sauce seems more suited for pork. Will definitely make again using a pork roast. *You can taste the vinegar so reduce by half if you are not a vinegar fan. *make sure you trim as much fat off as you can. I hacked up my roast into about 10 pieces trying to remove it all & the fat content came out just right.

Downeast Maine Pumpkin Bread

Omg this bread (more like a giant, moist muffin) is SINFUL! I subbed half the oil for 3/4 cup cinnamon applesauce, added a handful of pecan pieces, baked the loaves with a pan of water underneath them per a reviewer's suggestion, & covered with foil after 50 minutes of baking. After baking about 55 minutes I turned the oven off & kept the loaves in for another 15-20 minutes. I tried a small piece shortly after taking the bread out &... kinda yucky to be honest. The flavor of cloves was overpowering. After poking holes on top & melting a little butter, I ziplock bagged them, refrigerated & didn't try it again until about 18 hours later. I don't understand how the flavor could change so dramatically but it did. Sooo good! I made a cream cheese spread with honey & cinnamon that complimented the bread nicely. Definitely a keeper. Thanks Laurie from myself, my friends, & a few lucky neighbors.

Fra Diavolo Sauce With Pasta

I guess it's just me? I won't be making this again. The scallops were a rather nasty addition that I found inedible & the dish itself wasn't anything special. Very disappointed as I made this to impress the hubby on a rare visit home (Army)

Broiled Parmesan-Lemon Tilapia

I didn't have sazon so I used mccormick cajun seasoning. I served over steamed carrots with mashed potatoes. I did broil the fish about 5 minutes longer than suggested as I like it a bit crispy around the edges. This meal will be served often. Thanks for the recipe!

Quick and Easy Tuna Casserole

Super easy & made an excellent weeknight meal. Per review's suggestion i added garlic. Also crushed wheat ritz w melted butter as topping & browned 350 for 25 minutes. A keeper recipe that'll be too easy to modify. Next i'll try it with chicken breasts.

Manhattan Meatballs

I've made this recipe twice in the last two weeks. The sauce is EXCELLENT! Double the recipe as it doesn't make nearly enough. I'll be reducing the bread crumbs by 1/4 to 1/2 cup next time as the meatballs didn't turn out "meaty" enough; the texture made me think it tasted as though the ingredients were blended into paste. I found that apricot-pineapple preserves were better liked by all over the pineapple.

Banana Pudding IV

BOMB! Used layer of nilla waffers on top & covered with whipped cream. We tried it about an hour after I made it and could taste the swt condensed milk a little too much. The waffers were too crunchy too. After letting it sit about 24 hrs it was the best banana pudding any of us have ever had. Will never use any other recipe.

Quick Tuna Casserole

Really surprised how good this is. Needed seasonings. Per reviewer suggestions I added garlic salt, onion & herb, a big dollop of sour crm (about 1/4 cup), and pepper. Also doubled the mac & chz so the tuna wouldn't be overpowering. Next time I'll cook the macaroni less than directed so it's not too soft. Picky 2 yo & Hubby devoured this :-)

Monkey Bread Muffins

I didn't have biscuits in the fridge so I used the biscuit recipe off a bisquick box (bisquick, milk). Instead of dividing the dough into muffin pans I just spread it out into a big oval on a foil lined, greased cookie sheet, threw in a can of fried apples (drained), sprinkled in some of the apple pie/sugar mix, folded it over & topped with the apple p/sugar mix, brn sug sauce & chopped pecans. This mess didn't last 10 minutes :-) I was temporarily stumped when most of the brown sug sauce ran off & started to burn; I just flipped it onto a plate after it cooled & the burnt sauce broke off like thin peanut brittle when I peeled off the foil. Next time I'll use a hard pie pan to keep all that gooey goodness in but this was still a hit! My version was a fast, cheap, delicious apple cobbler of sorts that's a definite keeper. Great base recipe to experiment with.

Easy Shepherd's Pie

Awesome base. Used ground turkey and some kickin chickin seasoning. Definitely needs extra seasoning if u r into bolder flavor. My hub and picky 2yo kept thanking me during dinner ;-) thanks 4 the recipe!

Used miracle whip w olive oil. Made exactly as directed & it was pretty bland. Per reviewer suggestion I added blk pepper & parsley & it made a big difference. 4 stars with the changes. Thx 4 the recipe

Apple Betty

The finished product was too watery. I did cut the sugar by about a quarter but the topping was still too sugary. Also the family wasn't a fan of the apples themselves as there was no flavor. So next time I reduce the oj by at least a third, the sugar by half, and add additional seasoning to the apples before adding the topping. I was thinking that replacing half the flour with oats might be a good change to make it a little more hearty. Still, I am glad I tried this recipe out as it showed me how easy it can be to throw a quick but comforting dessert together.

Easy Meatloaf

Had to give this 4 due to alterations that made it a 5! BEST MEATLOAF EVER! I sauteed the onion w 2 cloves garlic 1 stalk celery in 1 tbsp butter. Added about 1 tbsp Worcestershire to the meat, reduced bread crumbs to 3/4. For the sauce double the ketchup & add a few dashes Worcestershire. I doubled the mustard because we like the tang and added about 1/3 c bbq sauce. The layering of the sauce on the bottom, middle, then top was a must.I topped w parsley flakes for a little color. cooked at 350 for 50 minutes foil covered, then uncovered for about 20 (kidz prefer beef well-done), then broiled for about 5 minutes. I did have to drain it several times and again right before broiling. Seriously, TRY THIS OUT!! Thanks reviewers for the tweak suggestions :-) I'll never make meatloaf any other way again
