Easy Batter Fruit Cobbler

seriously... MAKE THIS RECIPE! I tripled it and spread it between 2 8X11 baking dishes. I added 1 tsp vanilla, upped the butter by 2 tbsp per dish to "fry" the edges, and tossed each of my 5 cups of fruit w 1/4 c flour (so it wouldn't be soggy). I made one a strawberry/blueberry mix (5c) sprinkled w a little nutmeg and the other an apple/cherry mix (5c). If you like tart berry pie than try the straw/blueberry. If you like apple pie, the apple/cherry will make you smack someone lol Packing them both up now to share with some neighbors... afraid we'll eat it all! Thank you Pam for a new family recipe!

Puff Balls

made due with these tonight as we ran out of anything "good" (freak accident). Better sprinkled with lemon juice & confectioners sugar instead of the cinnamon/sugar. Certainly not the equivalent to a real doughnut but we were desperate

Homestyle Turkey, the Michigander Way

I sent my husband to the grocery for "turkey breast"... He brings back a 16 pound turkey... yeah, I know. Found this jewel of a recipe and with the addition of a roasting bag BEST TURKEY EVER!!! Had some friends over for a spaghetti dinner tonight and just happened to be roasting the turkey (no room in freezer). They stayed late for the most moist, flavorful turkey any of us has EVER had. It was annoying (almost) how it melted away from the bone as I tried to carve correctly, but it melted in the mouth beautifully, so.. forgivin :-) I'll never bother with ANY other way. Thank you so much for this addition to family tradition.

Juicy Lucy Burgers

Excellent as is and easy to customize. The second time around I added an egg and some red pepper flakes. Topped with a thin piece of Brie and served on an onion roll with a mayo, siricha & coffee ground aiole (chef john). Will never make a burger the old way again! Thx for the recipe :-)

121 Whipped Cream

Actually better than store bought! I love the extra density and creaminess. I used one quarter the amount of vanilla called for and about one tbsp sugar. It was perfect! Love that I can control the amount of sugar and I'll never buy store bought again :-) thx for a keeper

Soft Oatmeal Cookies

I've made this recipe a few times. To make them moist and chewy, I add a pkg of vanilla instant pudding mix (no additional liquid) and top with melted butter (a must). I also add a half tsp all spice to up the flavor. Make sure you flatten the cookies, especially if you make em big like I do. If your cookie has a salty-chemically taste than you used too much baking soda. The more baking soda, the further cookies spread

Tofu Parmigiana

This was my 1st time cooking and eating tofu. A first for my 4yo and husband as well. The fam loved it! I did call it chicken parm and I have yet to be corrected :-) I did the flour,egg, crumb method and baked at 375 for about 10 on each side. I used prego sauce, a mix of spicy sausage and meat sauce with a bit of sugar, fennel, cayenne, oregano, and garlic. I am super sensitive to particular textures, like eggs and mushrooms, and thought the tofu parmigiana had a texture like hard boiled eggs, the white part. The flavor was incredible but I couldn't handle the texture. I will have to make this again for the fam. Great recipe and easily modified for convenience and personal preference.

Impossibly Easy Mini Chicken Pot Pies

The husband and 4 yo really enjoyed these little minis. I didn't especially. Yes, definitely edible, but they are quite bland even after additional seasoning. They were just salty enough but lacked any sort of flavor depth. Great recipe for inspiration. I'll try it again with a rotisserie chicken, cornbread mix, yellow rice, saffron, scallions, red pepper flakes and curry. Maybe broccoli and cheddar baked in a stuffing mix too. Go easy on the filling as leftovers get a gross, soggy bottom. It's safe to fill up to the top of the cups with the bisquick mix. It doesn't really expand like I expected it to.

Chef John's French Toast

Still awesome! Only edit is to double the mixture if your using "country" type wider slices or thick cuts. I chopped up some apples and coated w allspice, cinnamon, pumpkin spice and a little honey. Baked at 350 for 20-30 and used as topping MMM! Also, out of of powdered sugar so put granulated sugar into the blender. Instant powdered (-: Huge fan of Chef John! He's my go-to for any recipe

Mom's Apple Fritters

Good but definitly needs cinnamon and extra sugar in the batter. I think a glaze goes better than the cinnamon and sugar topping too. Next time I'll make them tbsp size with hotter oil. Cooking large fritters with the oil at about 320 degrees ensured they were cooked through, but the big ones didn't have much crisp on the outside. Great recipe to play with. Side note , I followed the advice of some reviewers and grated the apple. I recommend NOT doing this if you want to be able to notice pieces of apple in the finished fritter. Using the large hole side of my grater still made the apple so small it was nearly completely incorporated in the batter.

These cookies are divine! I followed the recipe exactly and leveled off my tablespoon for uniform size and cooking. At 8 minutes and 20 seconds they are a tiny bit crispy on the edges and chewy and tender inside. Im fighting off the husband and 4yo so I'll have some left for family care packages. Honestly, these are too good to make with anyone around lol Thanks for the keeper!

Thanksgiving Leftover Casserole

The hubby and 4yo really liked this. As is, its pretty bland, so i added creole seasoning, rosemary, thyme, and celery seed to the sauce and used 3 slices american cheese, 1/4 parmesan, and Monterey jack. Ritz crackers made for a better topping than bread crumbs. Great comfort food on a cold night

Chef John's Beef Goulash

This dish earned at least 4 "amazing"s from my husband at dinner tonight :-) My 4yo kept telling me i did a good job too lol I reduced the heat by half and it still had kick. I did not have tomato paste so I substituted an equal amount of chopped sun dried tomatoes. At a simmer this reduced a ton so I had to add another cup of chicken broth the last half hour of cooking. I put it over spaghetti and topped with sour cream, parsley,Monterey Jack cheese and corn bread crumbs. Yet ANOTHER Chef John hit :-) Keep em coming and thanks!

Actually Delicious Turkey Burgers

good flavor with the addition of dijon with white wine mustard, soy, worcestershire, seasoning salt instead of reg salt, hickory liquid smoke, leaving out the garlic, and using goldfish cheddar crackers as sub for bread crumbs.
