Kentucky Biscuits

4 - 4.5 stars Sifted three times as recommended by another reviewer. Used milk because I didn't have buttermilk. These were very good. Soft and had an almost melt in your mouth texture. Will make again.

Quick and Easy Brownies

Very good! I did what other reviewers said and cut the flour down to 1 cup. I'm not big on cake-like brownies so this was muuuuch better. I think I'll throw in a little more cocoa next time and maybe some chocolate chips too.

Fresh Cherry Crisp

EXCELLENT! I like a lot of topping so this was perfect. The whole family loved it. A great way to use the cherries off our cherry tree. I've made this twice in about a week's time. The second time I made it I did cut the sugar back to 1 cup in the filling. The full amount was a tad too sweet for me. I will be making this every cherry picking season from now on.

Restaurant Style Egg Drop Soup

Very good! I did as another reviewer suggested and added 1 T of soy sauce, 1 T of sherry and a dash of ginger. I put the green onions in and let them cook in the soup to get some of the flavor into it. I also used homemade chicken broth. I can't eat cornstarch because I'm allergic to starch so I just left that out. The eggs did puff up, but if you stir the soup as your pouring the eggs in, they don't puff up so bad. A great low calorie dish!

Black Bean Brownies

Excellent! This are so delicious! I added 3 tsp of strong brewed coffee instead of the instant. I made some last week and am making them again tonight. They are in the oven. Can't wait until they are done.

Macaroni Au Gratin

I love that this recipe doesn't call for processed cheese. It is very simple to make and delicious! I didn't add paprika because although I like the flavor of paprika in mac & cheese, it tends to give it this odd gritty texture. Oh! When you make the cheese sauce, let your butter melt (over medium-low heat) next add your flour in stirring constantly until it turns a light, nutty-brown color then very slowly add milk stirring constantly until thickened. When it's thick pour it over the macaroni. I didn't bother to bake it. I just mixed it into the pot of drained macaroni noodles. Yummy! The kids loved it.

Refried Beans Without the Refry

This is delicious! I double the recipe and used 5 cups of chicken broth (all I had) and the rest water and filled the crock until it was about 1" from the top. Then I just stirred occasionally throughout the day. I left out the jalapeno and used garlic powder instead of minced garlic. When the beans were done, I put them in my food processor with only a little of the juice until I reached desired consistency and also added in a little sour cream which really seemed to set it over the top.

Mexican Rice II

Very good recipe! I will use it again. Hubby thought it was great. I used onion powder instead of onions. I added about another ounce of tomato sauce to it after it was done cooking to make it a tad juicer.

Oregon Salmon Patties

Excellent! I live in the south and 'round here a lot of times we make the patties and bread them with cornmeal and then fry. That is how I grew up eating them and have always made them myself. This is a wonderful variation on them. They taste much more decadent. I just breaded them with saltine cracker crumbs so I can only imagine how delicious they will be when I bread them with townhouse or ritz cracker crumbs next time I make this recipe. A few things to mention, I omitted the onion and just used onion powder and a little garlic powder and a bit of dried dill. Delish! My normally super picky 3 year old gobbled it up!

Bev's Chocolate Pie

Yum! This was amazing! Make sure you blend the egg yolks in before heating the mixture. I used 10 ounces of evaporated milk instead of 12 ounces. Also I used 1/3 cup of cocoa (which is 6 tbsp) just because it was easier than measuring out 5 tablespoons. ;-) This is my favorite chocolate pie recipe that I keep coming back to. Wonderful!

This was super easy to make and very good! I like my cookies a little on the softer side so I took them out at 8 minutes as another reviewer suggested. Other than that, I follower the recipe to a "T". Fantastic!

Baked Ham and Cheese Party Sandwiches

These were good! I will make them again. I didn't have minced onion on hand so I used onion powder and I omitted the poppy seeds because I didn't have them either. I used 1 tsp of worcestershire sauce instead of 1-1/2 tsp. I used thick sliced brown sugar ham and hawaiian rolls. I think there needs to be a little sweeter taste to the sauce though. Very good though!!!

This is my first time making anything like this so I didn't really know what to expect. These have a nice crispy, yet soft texture and if you take them out of the oil a tad early it leaves a creamy filling inside which is kinda nice (although I can taste the flour). I wanted them sweeter than the recipe called for so I used 3 tablespoons of sugar. They were still just mildly sweet in my opinion. My husband and kids thought they were great though. I thought they were okay. It was fun to try something different though and my husband is asking me to make them again so I probably will. ;-)
