My cooking tragedies
I was attempting to bake chicken for my in-laws. They had just driven from Florida to Maine, to stay for the summer. This baked chicken recipe was not rocket science, but on that day...well...you would've thought.. The menu was simple. Baked chicken, salad, & corn-on-the cob. In the middle of the craziness, I accidentally left the glass cutting board on top of the oven! Well, a burner must have been on, but i didn't realize it, and you can guess what happened next. The cutting board literally blew up, glass pieces shattered all over the kitchen, & into the oven where the chicken was baking! So, that night we ate salad & the corn. My father in law insisted the chicken was fine, and that it was "glass free". We weren't chancing it. We laugh about it today, and luckily I have learned not to put glass on top of an oven. My mother-in-laws advice, whenever I am at a crossroads on what to make is, "How about getting a rotisserie chicken?' I just smile & agree. :)

Thanksgiving Meatloaf
Omg! This is a must try! I tried this on a whim, just trying to use up what I had in the fridge. It's difficult to find a recipe that everyone in my family loves, but this was a hit! I added some minced garlic , Italian seasoning, I used 2 eggs & 1 Ib of turkey, it was scrumptious! I also like that it's a quick prep, for busy families, like mine.

Parmesan Crusted Chicken
Omg! This was to die for! I always read the other reviews and many times revise the recipe based on the other ones, but I didn't change much on this one. I added some spices (oregano, parsley, garlic, salt & pepper) my husband loved it, I loved it too, and I'm not a big fan of meat, but this really was amazing! It's a keeper!
