Italian Spinach Sausage Pie

Extremely tasty. I modified it by taking out one of the packages of spinach, eliminating the top crust and added sauteed mushrooms and onions and some parmesan cheese to it. Definitely a Man-quiche!

Buttermilk Oatmeal Muffins

I would have baked for maybe closer to the 16 minutes. We went 17 and it was a little dry. Added a cup of reconstituted raisins, a tsp of vanilla and topped the muffins with a sprinkle of cinnamon and sugar in the raw before baking, otherwise they turned out pretty good!

Orange Juice Jelly

I used fresh squeezed juice, and tried to get it to set twice, without any success. On a positive note, it makes a wonderful glaze for Orange Chicken which we had for dinner tonight...

Breakfast Cake

Changed up the recipe and it was a nice light cake. 1 1/4 cup of milk, 1 1/4 tsp baking soda, one egg, added 1/4 tsp of nutmeg and of cinnamon to the batter. Made a topping with 2 Tbs butter, 1/2 cup brown sugar and 1/2 tsp cinnamon to top it off. 35 minutes was a little long for a ceramic pan, though. Will try 30 minutes next time.

Best Ever Banana Bread

Really good recipe. I made it a little bit healthier by using half whole wheat flour and half white, cut the sugar down to 1 cup, and added 1/2 tsp of hazelnut extract, although I think a full tsp would be better.

Chef John's Pumpkin Pancakes

A nice recipe. The pancakes we made turned out to be fairly dense instead of fluffy, but they were nice and filling. I substituted fresh raw milk and used wheat flour instead of what was suggested. I might add another quarter teaspoon of cinnamon, nutmeg or pumpkin pie spice for a more robust flavor and a half a cup of roughly chopped pecans gave it a nice chew.
