Pizza Crust for Bread Machine

Wow! Best pizza crust I've ever made! So easy to make in the bread machine and extremely easy to work with. I felt like a pro! Didn't have any semolina flour, so I used bread flour in place of it (1 c.) with great results.

Berry Oatmeal Muffins

Delish! Used thawed blueberries (that we picked last summer and froze), made the flour a combo of 1/2 all-purpose white and 1/2 whole wheat, made the sugar a combo of 1/2 white and 1/2 brown, and made the oil a combo of 1/2 canola oil and 1/2 applesauce. Muffins were perfect consistency to spoon into the tins. I only had to bake mine 17 minutes and they were just right. I would definitely be sure to add the nuts (I used walnuts) just to add more texture, but that's just personal preference. Not super-sweet, but they tasted much better than just "healthy" even though they are! Looking forward to freezing most and then using them as quick breakfasts on the go!

Miss Betty's Super Quick Dinner Rolls

Very good and very easy! Made them twice in the last 3 days. I, too, used the self-rising flour substitute. I did have to bake them 20 minutes and turned the oven up to 375 the last 5 minutes to get them to brown on tops. Great as a quick bread side for any home-cooked meal.

Mel's Magnificent Chocolate Chip Cookies

Fantastic! I used 1/2 butter and 1/2 butter-flavored Crisco. I also used Halloween M&Ms in place of the chocolate chips (just because I was making them for a Halloween party), but I'm sure any kind of chip would be perfect with this recipe. Stayed just puffy enough out of the oven to look (and taste) great! YUM!

Crunchy Chicken Casserole

My 8-yr-old son LOVES this recipe and asks for it frequently! That's quite a feat considering he's a picky eater. I know it's not the healthiest, but I use reduced fat soup, only half the cheese and brown rice. No one in my family knows the difference and I feel a little bit better about serving it to them. Easy to put together and freeze an extra recipe, too.

Chocolate Frosting I

Mmmmm... Reminds me of grade-school cafeteria frosting! (yes, that's a compliment!) I upped the cocoa a bit and added less sugar as recommended. Also beat with my mixer to eliminate lumps. Perfection!

Baked Spinach Artichoke Dip

**UPDATED** I need to add that I make this with light mayo, light sour cream and light cream cheese. That should help with the "dryness" some are experiencing. I made this dip for our family Christmas Eve appetizer buffet last year. My little brother (who is 17) could not stop eating it! He even asked my mom to buy the ingredients at the grocery store so he could make it for himself at home over his winter break! I have prepared this recipe several times since then for family events and work functions. There is never a drop left over! It's so easy to prepare in a pan on the stove, then transfer to my crock pot for travel. Thanks for sharing!

Make Ahead Breakfast Casserole

I made this for a retirement breakfast at work (because my co-workers are my willing guinea pigs!). They absolutely loved it! I made two casseroles--one with turkey sausage, the other without meat--and they were completely devoured! I used egg substitute, turkey sausage, reduced fat soup, and 1% milk with wonderful results. This recipe was extremely easy to assemble the night before my event and pop into the oven in the morning as I was getting ready for work. I have had a bunch of requests for this recipe. Thanks so much for sharing!
