Best Brownies

Reviewed: Mar. 19, 2013
These brownies are DELICIOUS! I followed the recipe exactly and doubled. Wonderful crispy crust on top and fudgy middle - perfection! I did not make the icing, but instead served with vanilla ice cream. They got rave reviews and our company requested the recipe. The leftovers did dry out some, resulting in a bit cakier texture...should definitely be served immediately after baking. Thanks for the recipe!

Baked Ziti IV

Reviewed: Mar. 19, 2013
This was amazing! I gave it 4 stars, b/c I did alter the recipe as follows: 1. Made my own tomato sauce w/ what I had on hand - a 28 oz can crushed tomatoes, 2t onion powder, 1 1/4t garlic powder, 1t sugar, 2t fresh basil, 1/2t dried oregano, 1t fresh rosemary, 1t salt, pepper to taste. 2. Cut back on the cheeses and sour cream - 1/2C each of sour cream and cottage cheese (blended these together before putting on first layer of noodles), omitted provolone, divided 8 oz mozzarella between the two layers, topped with recommended amount of parm. The rosemary really shines in this dish, and the flavors are wonderful! Thanks for a great dinner!

Mouse's Macaroni and Cheese

Reviewed: Jan. 5, 2013
This made a perfect macaroni - creamy and delicious! I doubled the recipe (except for the pepper and mustard), trading out the American cheese for shredded cheddar (what I had on hand), and poured it all into the crock pot after mixing together. There was a perfect cheese:noodle ratio. Yummy!

I love this enchilada sauce. I will use it instead of the canned stuff from now on.

Strawberry Cake I

Yummy! This recipe makes a super-sweet cake, but it is soooo good. I made it for my daughter's "Pink Party" birthday. It was a hit. Thanks!

Peach Cobbler

This cobbler is to die for! I used fresh peaches - just cooked them on the stove w/ some sugar for a while - and doubled the recipe. Delicious! Thanks!

Steel-Cut Oatmeal

Reviewed: Jan. 5, 2013
This oatmeal had a great flavor, my family just wasn't really fond of the texture. We prefer it more "mushy". :) I've made steel cut oats overnight in the slow cooker before, and that gave us the desired consistency.

Honey Cornbread

Reviewed: Jan. 5, 2013
This a fantastic cornbread recipe! We love our cornbread sweet, and this one is just perfect. The only thing I change, is I use regular milk (whatever I have on hand) instead of heavy cream. Still turns out delicious. I usually cook these as muffins, and have found that they don't take as long as the recipe calls for to bake. It usually doesn't take more than 12-15 minutes.

Pear Cake

Reviewed: Jan. 5, 2013
I used 5 or 6 very ripe medium-sized pears. I also covered it in a basic vanilla glaze. When the cake was still warm, it was very moist. But after it cooled off, it became much drier, and not nearly as tasty. I was disappointed. A couple of days later, it was pretty good slightly reheated with some milk poured over. Overall, I probably would not go for this recipe again.
