Tater Tot Casserole

I added a layer of cheese just before the tater tots and used canned corn instead of peas. I'm sure you could use just about any veggie in there, too. Loved it!!!

Sweetened Spaghetti Squash

My new favorite!!! Had a huge spaghetti squash so I doubled the recipe and had to cook it longer and we loved it!!! I could have eaten the whole thing by myself if I didn't have to share it with everyone else. I liked mine with a bit of added salt but the kids loved as is! P.S. I started making this once and was then invited to the in-laws for dinner at the last minute so I put it in my slow cooker on low till we got home. It was still just as awesome!!!

Slow Cooker Mussaman Curry

I made it with two large chicken breasts in stead of beef, curry paste instead of powder, more potatoes to feed a couple more people and didn't have time for slow cooking because I didn't plan ahead so just cooked it over the stove in about an hour. Served it over coconut rice made in the rice cooker with a can of coconut water, water, sugar and a little salt. It was AWESOME. It was nice and creamy... always my favorite!!!

Six Week Bran Muffins

I can't believe I tried other recipes after I used this one. This has to be one of the best homemade bran muffins. I halved the recipe and finished it in about a week. It's really nice to make fresh muffins when you want without all the mixing each and every time. I just have to make sure I have room in my fridge for the big bowl :D

Jambalaya

I didn't have file powder and didn't add the red pepper flakes and hot sauce... because I have small children and it was still plenty spicy but I did add extra celery and a pound of shrimp. Made sure I had a nice tight fitting lid and cooked on lowest burner setting and no problem with crunchy rice. Super Yum! Will def make again!!!

Bacon Cheddar Deviled Eggs

Love these!!! Used up the Easter eggs after the kids were done hunting. I also added some chipotle mayo as I had more than a dozen eggs and diced a couple slices of hardwood smoked gouda instead of the cheddar. They were awesome! Thanks :)

Slow-Cooker Chicken Tortilla Soup

I never have all the ingredients. I have never put in the enchilada sauce but usually double the green chiles. Also to cut down on time I just throw the chicken breast in to cook with the soup then remove, shred then throw it back in... I like to add some beans and never forget the fresh cilantro!!! Sweet Dinner Rolls

Really loved it. The dough seemed really dry when in the bread machine so I added almost 1/4C of water and then when I cut the dough to roll into balls the dough was still pretty dry so I had to make sure my towel was nice and wet the whole time they were rising by wetting with warm water occasionally. Maybe it was a really dry day here in CO but we just loved the rolls and I will def be using this recipe again just with a bit more water. Thanks :)

Bread Machine Pizza Dough

Came out of the bread maker pretty sticky but like any dough humidity can affect how much flour you need. Also didn't have any beer so just used water. At first I wasn't sure I liked it because it came out fluffy and pretty soft. I generally like a thin crispy crust but my husband and I both agreed we really like it and with the bread maker doing all the work we will be making pizza A LOT more!!! Thanks so much.

Ham Bone Soup

Saved the stock from cooking the ham... sweet glaze and all... put it in the fridge overnight skimmed the fat off the top and then froze in a baggy. Threw the left over hambone with meat still attached in a separate baggie and when I was ready to make this recipe I threw it all in the crockpot to thaw and cook. Then threw in all the ingredients with less water and bouillon to make up for adding the stock... let everything cook for suggested time then took out the hambone with the meat still on it then remove meat, cut up and put it back in the pot. I especially loved the cinnamon from the ham glaze. Great for a cold day. Hubby and children loved it. Left overs were awesome days later. Thanks for the great recipe!!!

BBQ 'Pulled' Tuna Sandwich

I was so worried that the BBQ would taste fishy and no one would like it but the fam didn't even notice it was tuna. Taste and texture were awesome and took so little time to make... I've got a new favorite tuna recipe!!!
