About Me
Cooking, Champagne and travel are my vices. To accomodate all 3, I created JaniesKitchen.com; a site dedicated to enjoying "Everything in Moderation."
My favorite things to cook
I love to slow cook as many things as possible: 48 hour marinated steaks, 5 hour parmesan polenta, 72 hour brined chicken to name a few. I also love baking anything from homemade pop tarts, bagels, vegan cookies, granola and anything with chocolate. I love cooking Italian and Mexican cuisines more than any single other option. My husband doesn't seem to mind.
My favorite family cooking traditions
My Grandma's sugar cookies (her trick: roll the dough out to a paper thin consistency and add fresh lemon zest to the dough). My mother makes the most amazing porkchop casserols with slow cooked potatoes in a creamy sauce. Christmas is our favorite holiday for cooking traditions. So much so that my husband proposed to me infront of my family on Christmas Day 2010!
My cooking triumphs
Bagels. I have been practicing the perfect New York sytle bagel and just recently did I believe I made the perfect bagel. Brining poultry. Finding the right amount of salt and spices and the allowing it to cook for the perfect amount of time. Salmon Fish Sticks. The first time I made them they tasted great but visually was a disaster. I've finally created the perfect combination of appearance, taste and overall healthiness all in one salmon filet.
My cooking tragedies
Sourdough bread. I have tried severall times and I continue to fail. I have taken a break from my attempts to allow my self confidence to rise again before trying again. Will let you all know.
