Cranberry Apple Casserole

With ingredients which are easy to stock in my pantry, this is now my 'go-to' recipe when headed to a party or for a special occasion. Friends and family rave about it once they've tasted it! I've made it using foil pans so when there's nothing leftover I can just toss it. Although I have found it to need just a little more butter to keep the oatmeal moist. (If the pan is wide enough, I think the juices from the fruit soak in more.) Excellent and easy!

Easy Roasted Pork

Super easy! Made this dish for Mother's Day and the family loved it. Everyone raved about the 'sauce' which we used not only for the pork, but also for the mashed potatoes. Will certainly be filed in the 'family favorites' category.

Roasted Lemon Herb Chicken

I used a salt brine for two hours the night before. Rinsed & dried the chicken and put all the spices on it & in it. Then poured lemon juice mixture over it and left it in the fridge overnight. I cooked it breast side down in a Pampered Chef stoneware pan with a bowl on top of it. People at work loved it so much they asked for the recipe. I will make it again!

Baked Miniature Pumpkins

Made these for my sister's birthday in October. Everyone LOVED them and they made great centerpieces. I used slightly bigger pumpkins - just had to cut the tops to fit the oven. Put them in a pretty bowl to keep the sauce from oozing out.

Grilled Pork Chops with Balsamic Caramelized Pears

Had a hard time getting the vinegar reduced properly which probably affected the sauce. I will try it again with thinner chops.

Slow Cooker Sweet Potato Casserole

My family loved this recipe and I've been told to put it in 'rotation' for other holidays. I bought two large cans of potatoes and adjusted the recipe to fit. (That was my biggest challenge, making the recipe ingredients fit the amount of potatoes I bought.) The only thing I'd do differently is make more topping, which I loved.
