Excellent! I followed the suggestion from a previous reviewer and used the filling inside flour tortillas. I then put green chile enchilada sauce (Hatch) w/ cheese. I made a double batch, so I have plenty of meat/veggies left over for other dishes. Awesome base recipe! Thanks!

Chocolate Zucchini Bread I

Nice way to use my giant zucchini. I had already given just as many as I could to everyone I knew, so this was a great way to use the big ones that were left over. I loved how moist it turned out.

Banana Banana Bread

When it comes to baking, I'm still in the ultra beginners group! This recipe made it easy for me to turn out something that the KING OF BANANA BREAD lovers (aka 'my husband) would enjoy. I had a fun time cooking this with my daughter.

Simple Whole Roasted Chicken

I followed the advice of the previous reviewers by doubling the spices and putting an onion in the cavity w/ the garlic. I let the rub stand for 6 hours vs. overnight. The main thing I changed was the cooking method. My roasting pan was way too large for my chicken, so I substituted my cast iron dutch oven. I added a small amount of water (1/4 cup?) to the pan, but I probably didn't need that. I kept the temperature at an even 375 the entire time I cooked it. I basted several times. I was amazed at how wonderful this turned out! The gravy I made with the drippings was equally fabulous! Definitely will make this again!

Mock Chicken Fried Steak

I followed the recipe (added dried onions and garlic powder) up until rolling in the crackers. I dipped each patty in a dish with an egg in it, then I dipped it in the dish that had the mixed crackers with Italian style breadcrumbs. I fried this on a lower heat. I ended up avoiding the burning of the breadcrumbs because of this. Country style gravy and homemade smashed potatoes rounded out the meal. One of my favorite things is Chicken fried steak, so I was pleasantly surprised by this recipe.

Frog Eye Salad

What a great recipe! I had this for the first time on Thanksgiving. I zipped over to Allrecipes to see if I could find a similar recipe and here was this one! It tastes identical to the one I had and loved on Thanksgiving. Thank you!!

Taco Seasoning I

Perfect. I read the suggestions from the other reviewers and was quite pleased at the outcome. I used a mortar and pestle to grind the spices together. This helped in breaking down the dried red pepper flakes and mixing everything together.

Easy Honey Mustard Mozzarella Chicken

I liked the way the different ingredients combined to create a completely new flavor. I did use dijon mustard as opposed to the mustard called for in the recipe. I cooked the entire recipe at 350, and for a longer period of time. The bacon stayed on longer, and the sauce thickened because of the longer, lower temperature. When making again, I would pound the chicken breasts to make them thinner. This was a hit! Thanks!

Sweet Potato Potato Salad

Gnocchi Bake

Loved this recipe. I typed "gnocchi" into Allrecipe's search engine and this recipe had all of the ingredients that I had on hand. I guess I should clarify that though, I didn't have the spaghetti sauce, so I made my own using tomato sauce, Italian seasonings, garlic and minced onions. What a nice, easy and tasty recipe!

Balsamic Bruschetta

Great selection of ingredients. I liked the balsamic vinegar. I happened to have some "Johnny's Parmesean and Garlic" so I used that instead of the separate garlic cloves and parmssean (though they would have tasted just as great I'm sure) One other change was due to a personal preference...I added more olive oil than what was called for in the recipe. YUMMY! Thanks Kathy for the submission.

Marinated Pork Tenderloin

I was pleasantly surprised with this recipe. The flavors worked well together. I marinated it for as long as the recipe required, but due to some laziness on our part, and an unseasonably cold evening, we opted to cook this in a skillet on the stove. I seared the outside, then covered it and cooked on low. The sugar ended up carmelizing, and it was FABULOUS! So, next time we'll try the grilled way and see if we like it just as much.

Sausage Casserole I

Went with the general consensus and modified the recipe as previous reviewers suggested. I used all of my mozzarella on a separate appetizer the night before and only had monterey jack, but it was still tasty! And I used the recommendations of the spaghetti sauce, the browning the sausage and onions as well as cooking the potatoes prior to assembling the casserole. A previous reviewer made mention of the corn side dish with oregano. I love fresh oregano!!! I took that suggestion and it was a nice side dish that complemented the meal quite nicely. As an afterthought, it seemed like the newly created sauce, with the spaghetti sauce, sausage, onions and etc, really had a promising start for a good lasagna sauce! I'll have to tweak that a bit and see what I come up with. Thank you for all of the previous reviews.

Chicken Spaghetti II

If I had to rate this strictly on how this turned out this evening, I would have to rate this 3 stars. This is only because, in our opinion, it was too cheesy. We followed the directions to the letter. It was a gooey mess. I do not have an excuse, because I did read the other reviews where the people said that it might be a bit too cheesy. So, the 4 star rating I gave this recipe is based on the fact that we truly loved the combination of flavors!! The only change next time will be to decrease the cheese substantially! And yes, we love cheese too, so for us to say that it was too cheesy says a lot! :)

Shrimp and Crab Enchiladas

I wasn't overly thrilled with this recipe. It didn't have a bad taste, but on the other hand, it really didn't taste great either. In fact, it seemed that something was a bit off about it. Initially, I used all the ingredients called for in the recipe, without any substitutions. After tasting it, we did add some hot sauce of our own, threw a fried egg on it and added a tad of sour cream. That seemed to make it somewhat better, but it still was just so-so even with those add-ons.

Creole Cornbread Stuffing

I liked the flavors in this stuffing tremendously. I am only rating it a bit lower because for some reason it turned to mush when it was completely assembled. I will have to make it again to see if it was something I caused, and if I can fix it.

Giblet Gravy I

For some reason, when we saw that eggs were an ingredient in this gravy, it actually sounded pretty good. So, we weren't surprised that we liked it. We were surprised at how much we liked the recipe as a whole! This is definitely a keeper.
