Lemon Cupcakes
I substituted all purpose flour for cake flour & put 1 tsp of Baking powder for every cup of flour used, as said in one of the reviews. It turned out fine. I doubled the vanilla extract as well. I skipped the icing ingredients & used Non-dairy Pastry Pride Ready to whip topping for a lighter frosting w/a tinged of Vanilla extract. Everyone liked it!
