Also bear in mind that when you're making the butter/sugar sauce for it, you are basically making caramel, so I've found it's best to let it simmer till slightly syrupy, so as to get more creamy caramel flavor. Don't worry if it seems too thick, the moisture from the cooking apples keeps the pie juicy.
