I added a 4th a teaspoon baking soda to the lemon juice to tone down the acid a bit (sensitive teeth) and it was perfect.

Owners of restaurants and B&Bs take note: This is the rare kind of recipe that keeps people coming back for more. Put this on the menu, it is insanely delicious! :) Also bear in mind that when you're making the butter/sugar sauce for it, you are basically making caramel, so I've found it's best to let it simmer till slightly syrupy, so as to get more creamy caramel flavor. Don't worry if it seems too thick, the moisture from the cooking apples keeps the pie juicy.

Delicious! This is my go-to recipe for guacamole now. My one change was to add just a *smidgen* of CUMIN, which adds a nice body to all the flavors, and then it was perfect.
