Crab Stuffed Flounder

This is really important: DO NOT USE ARROWTOOTH FLOUNDER. If you do, the entire dish will turn into a mushy paste. I recommend using sole. I've also tried the recipe with snapper and it worked well. The recipe "as is" is pretty tasty. I modified it slightly by using butter crackers instead of saltines. I also pan fried the fish before adding the crab layer on top and then baking the entire dish (but reducing the baking time).

Shepherd's Pie VI

Really nice recipe. I recommend the following: 1) Use Yukon gold potatoes 2) Add 2-3 tablespoons of Worcestershire sauce to the ground beef like other reviewers have mentioned 3) Add green beans. Make sure the green beans are cooked but have some crunch to them. It adds nicely to the texture of the dish.

Sausage Mushroom Quiche

It's a good base recipe but as other reviewers have mentioned, the proportions are a bit off. If you use 1/2 lb of sausage, it should be enough for 1 deep dish pie crust. You also need to bake the quiche for about 45 minutes. I modified the recipe a bit: added spinach, mushrooms, and replaced the parmesan with sharp cheddar cheese. The cheddar made it even tastier.

Hot Feta, Artichoke and Roasted Red Pepper Dip

Overall, the dip recipe is pretty good but I made a few modifications. First, I added only 1 cup of feta and replaced the 1 cup of mayo with 1/2 mayo and 1/2 cup of sour cream. I also added some sharp cheddar cheese, green onions, and olives. If you put the artichoke hearts into a food processor, you get a nice smooth, creamy dip texture.

Stuffed Mushrooms with Spinach

Wonderful stuffed mushroom recipe. I substituted low-fat cream cheese instead of heavy cream and had to add some bread crumbs. Tastes good with or without bacon.

It's not the best stuffed mushrooms recipe on this site but it's pretty good. As many reviewers have said, the proportions in this recipe can stuff a whole lot more than 12 large mushrooms.

Middle Eastern Rice with Black Beans and Chickpeas

Outstanding recipe! I added some onions with the turkey as suggested by the other reviewers and it came out great! Watch out for the ground turmeric...it really stains, so don't wear your best clothes if you are cooking or eating this.

Alyson's Broccoli Salad

Great recipe! I threw in some shredded cheese and used craisins like many of the reviewers suggested. I like to let it sit overnight so that the broccoli soaks up the dressing. If you do let it sit overnight, make sure you don't add the bacon, nuts, sunflower seeds, etc (basically anything with a crunch to it) until just before serving.

Spinach-Stuffed Salmon Fillets

What an excellent recipe! I ended up changing it a bit though. Here are my modifications: 1. First, I cooked garlic, shallots, mushrooms with the spinach. 2. Then I added feta cheese to the spinach mix. If you add feta, remember to cut back a little on the amount of salt you put on the salmon because the feta is salty. 3. I used sun-dried tomatoes in oil. 4. I gave up on putting slits in the fillets. Instead, I took two large but fairly flat salmon fillets, placed one on the bottom, put the spinach mix in the middle, and put the other fillet on top (thin end on top of the thick end). I took string and tied the two fillets together, making a salmon parcel. Due to the thickness of the parcel, I had to cook it longer in the oven. As one reviewer already mentioned, the spinach really goes well with the salmon (for reasons only known to iron chefs). Adding mushrooms will enhance the spinach even more.

Amazing Butternut Squash

The recipe is a good start but needs some modifications. I did the following: 1. Don't add the onions. They don't fit in this recipe. 2. Replace the mayonnaise with vanilla yogurt and make it slightly less than 1/2 cup. You could also add a teaspoon of vanilla extract. 3. Replace the saltine crackers with Graham crackers The result is a sweet, vanilla flavored dish that lets the natural butternut squash flavor come through!

Indian Cauliflower

I had to leave my cauliflower in the oven for a lot longer than 30 mins for it to cook. I also used tomato sauce instead of pureed tomatoes and real garlic instead of garlic powder. The result was still a great tasting dish!

Spicy Honey Mustard Pork Roast

This is a great recipe, especially if you love spicy food. If you don't cut the pepper to about 1/4 of what is stated in the recipe. The sauce is incredible! Works well with pork chops too.

African Chicken Stew

Wow this is a fabulous recipe! I used chicken broth instead of water and I substituted yam for the potato. It still turned out nicely. The garbanzo beans add a nice touch.

Excellent fried chicken! It tastes just like extra crispy KFC. I agree with the other reviewers that you need to add more seasoning otherwise the chicken tastes a little bland.
