Vegetarian Korma
My husband is a very picky eater as is my father. I made this tonight and they both really liked it. I had some frozen corn leftover from the other night, so I tossed that in as well (with a healthy dash of cumin.I made quinoa (boiled with vegetable broth, not water)and mixed it right into the main serving dish. I baked naan bread until crispy for those who wanted it. I omitted the cilantro, but I served with a simple side salad. Delicious, spicy, slightly sweet: a keeper for sure.
