Awesome Slow Cooker Pot Roast

Delicious! I used one can low fat cream of mushroom and one can low fat cream of celery soup, as well as beef broth instead of water. I also added some halved mini potatoes, diced onions, and sliced carrots into the slow cooker for the full cooking time. Everything came out delicious, and the gravy was incredible! Used a quarter cup-ish of corn starch and water to thicken up the gravy in the last few minutes. Meat was so tender, veggies were perfect, gravy was to die for. A whole dinner in one pot - with so little effort!

Roasted Vegetables

Simple and delicious. Easy to mix up the kinds of vegetables you use - I added zucchini and turnip instead of the sweet potatoes.

Broccoli with Garlic Butter and Cashews

This was great! Made for Christmas Dinner so I tried to prep the sauce ahead of time. It ended up with a bit of a film, but was easily removed and the rest of the sauce went on the broccoli. It was the first dish that was gone! Tastes like great Chinese food, even without the cashews (I had diced almonds instead.)

Stuffed Zucchini by Campbell's Kitchen

A simple and delicious recipe! I added quite a bit in terms of spices - more oregano, basil, parsley, S&P during cooking. I made it for a family christmas for about 20 people and expanded the recipe quite a bit and cut up the zucchini into personal portions. I cut up the zucchinis into halves or thirds depending on the size and then filled them before baking in the same way. I found that the half cup of sauce added onto the shells at the end was not that helpful. It did keep some extra moisture while it baked, but it wasn't enough to really coat or even touch most of the pieces. I would probably add some cooked spinach or lots of extra parsley next time for colour. Even using green spinach, it isn't a very colourful dish. Everyone raved about them and it was a hit at the christmas party! Certainly a repeat dish. It can all be cooked in one pot (other than the rice) so it keeps dishes down. Success!
