Great recipe. My variation uses 2 Tablespoons of Vanilla extract (real, of course)mixed in along with the butter, and a package of blueberries as well. My "Otay Blueberry Pancakes" are in the 2012 edidtion of my girlfriend's family cookbook now, and I'm forced to make them anytime I go visit her family.
