Lemon Whippersnappers

I made these for my father-in-law who loves lemon and he devoured them. They didn't even last the whole weekend! I used a little bit more cool whip (the entire 8 oz container). It is important to chill the dough even between batches because the dough gets pretty sticky.

Crescent Pastry Puff

This was FABULOUS! Not only did it taste wonderful, it looked beautiful too! The only change I made was to add a little bit more of the cinnamon sugar mixture in with the apples. This will become a frequently made item in my household...thanks Heidi!

Raspberry Truffle Fudge

Sloppy Joe Mac and Cheese

Not so good. It sounded wonderful, but I was disappointed with the results. I took the other reviewers' suggestions and made my favorite mac and cheese for the bottom. The envelope mix/sloppy joe topping was horrible. I had to doctor it up considerably to make it edible! I think if I made this using my favorite mac and cheese plus my own sloppy joe recipe this might be better, but I advise against the envelope sloppy joe mix....

Friday Night Veggie Soup

Great flavor! I added only 8 cups of water and that was more than enough. Also, the frozen vegetables did get a little mushy while the potatoes and celery were perfect. I think next time I make this I will spend the time and cut up fresh vegetables.

Peanut Butter Eggs II

I made these for Easter and they were a big hit! I used only 3 cups of powdered sugar and the eggs were plenty sweet. I also added more rice krispies so that the eggs were crunchier. I wound up running out of chocolate and probably used 1 1/2 bags of choc chips total. Good recipe, but time consuming.

Chicken Breasts Stuffed with Perfection

Made this for Christmas dinner....it truly was perfection. The only change was leaving out the mushrooms because of family taste preferences. I also used prepackaged bread crumbs for the topping. I cooked 9 breasts and had exactly the right amount of "perfection" for filling. I recommend cooking in a 9 x 13 with edges because we had a lot of juice when it cooked. Thank you so much for a fabulous christmas dinner!!!!

Pineapple Enchiladas

I LOVED this! I am a very big fan of pineapple (especially when its in places you don't expect it) This recipe was just what I was looking for. I increased the amount of sour cream and used pineapple tidbits. The only other change I would recommend is removing the cover during the last 10 minutes or so of cooking so that the cheese browns up.

Flank Steak a la Willyboy

Smashed Cauliflower Side Dish

My husband raved about this dish! I only used 1 bag of frozen cauliflower, 3 Laughing Cow light garlic and herb wedges (instead of the butter), 1/4 tsp salt and 1/8 tsp pepper, and then 1 tsp of garlic powder. Easy and delicious. Will become part of our regular rotation!

Fresh Strawberry Upside Down Cake

Very good cake! I made homemade whipped cream to go with it, but I think it tasted good even without it. I used 2 pounds of strawberries, smashed well. Followed the directions exactly. 45 min of bake time in my oven.

Mandarin Mousse Mold

This was my first attempt at a Jello mold and it turned out great. The only change was that it took closer to an hour before the first layer reached the desired consistency. Served it at Thanksgiving and it was a hit!

Flank Steak Pinwheels

I made this for Christmas dinner and my family raved over it. I pounded the steaks a little thinner than instructed, probably about 1/4 inch. Also I took the leftover marinade, boiled it and then thickened it into a gravy. I doubled the recipe there still were no leftovers. My husband said that it tasted like a gourmet restaurant. Thank you for such a wonderful recipe!

Grilled Chicken Breasts with Zesty Peanut Sauce

I didn't make the sauce because the ingredients were not on hand, but the marinade was phenomenal. The chicken came out very tender and juicy and with a great flavor. I added more garlic and a little more cayenne, marinaded about 6 hours...YUM!

Chocolate Zucchini Bread I

Thank you for the advice from previous reviewers. Following suggestions I subbed applesauce for half the oil, also 3T cocoa and 1 T butter per square of unsweetened chocolate. I also coated the chocolate chips with the dry ingredients before stirring in and they stayed evenly throughout the loaf.
