Swiss Chicken Casserole II

For this type of recipe, it is five stars. I cut the chicken into one inch pieces. I added cauliflower and broccoli to the chicken layer. I substituted wine (but will try sherry next time just to see difference) instead of milk. I did season the chicken a little, use whatever you like. I melted the butter and added that to the stuffing mix then poured that on top. Everyone in this house loved it. My BF makes a family fondue recipe often and this reminded me of that flavor with the Swiss cheese and wine. Yum!

Cream Cheese Penguins

The first time I made these were to have something cheerful at Christmas for my beautiful step-mom that was losing her battle with cancer. I can't even put to words to reaction the penguins got. They each have their own personality. I use the furry top toothpicks and put on a white plate covered with coconut to simulate snow. I am not a big olive fan, so have never consumed one in the five years I've been making them, but they always seem to disappear. I made them last Saturday and one guest took two home to her kids. They are so cute!

Quinoa Side Dish

Spooky Witches' Fingers

I have made this for the past two years and now it's just a given. Changes: I used sliced almonds and put raspberry jam under the "nail" and at severed end - cooked with the jam on. It makes it look coagulated. Ewwww. :-)

Slow Cooker Beef Stroganoff I

This was yummy. Already gave out the recipe to someone I made it for. I doubled the sauce, added baby carrots and small red potatoes served over egg noodles. For the big people, I added a habenero finishing salt to spice it up. Wow!

Chicken Marsala

I did not change anything, well maybe added more mushrooms. It was a good Marsala recipe and my boyfriend said it is definitely "company material". We made it with surprise mashed potatos - no potatoes use cauliflower. It was a good match.

Catherine's Spicy Chicken Soup

This is wonderful! I have made this a few times and added extra veggies - like carrots, zucchini, whatever your heart desires. I have some habenero salt and added a that instead of regular salt. Wow! I could have this once and month and be happy, happy!

Raspberry Sauce

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

I have made this a few times. My only suggestion is take your time making the port wine reduction. Last night I sauted the onions longer and reduced to a little less than the recipe. It was amazing. Great recipe!

Artichoke Chicken

This was delicious. I took some advice and did half mayo/half sour cream. I doubled the sauce and was going to add mushrooms - I will next time for sure. I also put panko crumbs on top and broiled for last five minutes. We loved the crunch!

Chicken Breasts Pierre

This was really good. I used diced tomatoes since I don't like bell peppers which tend to be in the stewed tomatoes. I would add more pepper while simmering. I served over jasmine rice which a side of sauted fresh green beans. It disappeared.

Tangy Slow Cooker Pork Roast

This was wonderful! I took the advise of others and made more sauce - actually three times the recipe. I added red potatoes and baby carrots and more red pepper sauce and I used pork shoulder. The next day my wonderful boyfriend made soft tacos with it. It was amazing!!

Salsa Chicken

I usually don't give bad reviews, but this was just not very good. My boyfriend, who is the nicest man on the planet, could only say, "it is just nice to have a home-cooked meal." I liked all the ingredients, but together they just didn't do anything special.
