Cranberry Scones

This is a PERFECT recipe. Don't be confused by the instructions to knead the batter. I think the author just means to mix the berries and nuts well. Instead, I dropped rounded spoonfuls on a baking sheet and baked at 375 for 20 minutes as instructed. These scones couldn't have been any better from a New York City bakery! I've made three batches of this recipe in one week and everyone who has tried one has raved (and everyone thinks they must be so hard to make! I've got them fooled!) I use the Crasins found next to raisins and leave out the sugar and orange. For variation, I've substituted chocolate chips and walnuts. DELICIOUS and PERFECT every time!!!

Dairy Free Chocolate Pudding

This recipe tasted very bad. There certainly needed to be more sugar to flavor the unsweetened cocoa, but there was also a problem with the soymilk. I know in preparing steamed espresso drinks with soy, you can not allow the soymilk to become too hot or it will begin to seperate and become salty. I think that was the problem with this recipe. Perhaps the soymilk should be added later in the cooking process to prevent the milk from becoming too hot and separating? I don't recommend this recipe.

Chocolate Chip Bars

I thought I did something wrong when I first tasted this recipe but upon double checking, I realized this recipe is just not good. The shortening causes the bars to be greasy and there's way too much flour and not enough choco chips. I had to trash this dish and start over with a new recipe. From now on, only real butter for me. Shortening just isn't right for this dish!
