Downeast Maine Pumpkin Bread
I had to really tweak this recipe to get it to work. 2 eggs, 1/2 cup oil, scant 1/2 cup water, 2 cups sugar, 1 T baking powder, no soda. Once I had changed the recipe the loaves came out lovely. We tried a little allspice but, hubby didn't care for it. Not easy to slice when warm but, WELL worth it. I made up a little cream cheese icing and the kids and I used that. Hubby liked his with butter. I tried it with applesauce for 1/2 cup of oil; not really necessary, just cut the oil in half.

Creamy Italian White Bean Soup
I doubled the batch and added 1 lb of crumbled, cooked bacon. I served it with fresh bread from the bread machine. My kids LOVED it!!! It is now frequently on our winter menu!!!
