Hot and Spicy Tofu

I followed the recipe except I used olive oil instead of peanut oil and as some other reviewers noted, I multiplied the sauce by 1 1/2 times. The heat was perfect and we both really enjoyed it. I laid this on top of some Maifun rice sticks that I deep fried in oil along with a nice oriental salad with Makato orange ginger dressing. Definitely a keeper! Thank you for your recipe.

Bay Leaf Beet Soup

Coconut Walnut Squares

This is a very good recipe. I used soda water instead of beer. I used enough of the soda water so that the consistency of my batter was good for dipping. I love it with the coconut but for those who did not like coconut, I used seasoned panko bread crumbs instead.

Coconut Shrimp II

This is the best coconut shrimp that we ever had. One change we had soda water on hand instead of beer and it still had a beer batter texture from the foam from the soda water. The recipe called for 1/3 cup of beer and I ended up using about 2/3 cup of soda water. We didn't need nearly as much of the sauce which also by the way was incredible with this shrimp. This is definitely a keeper

Grampa's Coriander Turkey Sausage

I made this for breakfast this morning and we both really loved it. I know it's called coriander sausage and it sure stands out in the flavor. I had around 1/3 pound or so of ground turkey so maybe the ratios were a little off. I normally don't do this when I try a new recipe but, I added a pinch of sage. We had this sausage with omelets and British muffins and they were great together. Hopefully next time that I make this it will be with a full pound of ground turkey and let it rest in the refrigerator over night. All in all it was a great substitute for store bought pork sausage. Definitely a keeper!

Best Ever Meat Loaf

I made this meat loaf and it was really good. I have another meat loaf recipe that I normally use but I wanted to try a different one this time and it was a hit! I wasn't sure about the mustard or the fresh bread but it was worth the chance. I have saved this to my recipe box and will be making it again.

Oriental Edamame Salad

Baked Ham with Maple Glaze

We are having this ham tonight for new year's eve 2014. This was so easy to follow. One problem I had and that was I had to settle for white wine vinegar as I didn't have any red wine vinegar. Everything else I followed to the letter. I wanted something different like others were saying and I didn't want this to be like an Easter ham. The glaze is delicious. I can't wait to have it tonight... I'm sure it will be great.

Spicy Catalina Swai

To begin with we love Swai fish fillets. When following a recipe, I always try my best to follow the directions exactly before commenting on a dish on this website. However, with this dish we had to make our own Catalina dressing as we didn't have any on hand. I don't like white pepper so I left that out as well. The fish turned out perfectly. It took 12 minutes to cook them and the sauce was great. We have never had Swai cooked like that so it was a nice change. I made some refried rice to go with the fish and together it was as good as any oriental restaurant has to offer. The only thing I can add is the next time we make this dish together it will include the normal Catalina dressing and not our own concoction. Definitely a keeper!

Best Egg Rolls

This is the first time that I made egg rolls. I made a dozen of them and every one raved over them. To be honest I didn't use the ground pork this time so they were actually spring rolls. Next time I'll add the ground pork and I'm sure they will be just as good. Note: I used a thermometer to check the temp and 375 deg. was a little to high as the first batch got a little to much of a tan.

Best Beef Stroganoff

This is an easy recipe to make and my family loved it. Deffinately a keeper. Only thing was I didn't have any burgundy on hand so I used what I had, white cooking wine. I know it was at the opposite ends of taste but this still was great. The next trip to the store will include burgundy cooking wine to try this again.

Italian Spaghetti Sauce with Meatballs

I have made this recipe several times and it's a big hit! I will say I followed the directions to the "T" the first time I made this sauce so I could factually report on someone else's recipe. I'm not sure how someone can give an accurate critque on any given recipe when they write I followed the recipe except I did... (xyz). I have never been able to understand that that. Any way now my soap box speech is over, I have changed the sauce a little. Instead of using cans of whole tomatoes, I used crushed instead and I used 4 cloves of garlic instead 5. The meat balls I made as directed and continue to do so. My family loves this recipe. It takes longer than opening a jar but it is by far worth the effort.

Fried Corn with Smoked Sausage

This is a very good and very easy to make meal... The only reason I didn't give this 5 stars is I don't use MSG to flavor food. I'm am terribly allergic to MSG. So, I had to slightly increase the the amount of natural season salt, onion powder, and garlic powder. To add a little more flavor I used a pepper blend instead of black pepper. One thing I'll pass along however. The next time I make this dish I'm going to brown the sausage pieces by themselves not with the peppers and onions. All of the moisture in the peppers and onions prevented the sausage from browning (I think the crunchy texture of the fried sausage will add to the flavor and texture of the dish). Finally, The recipe calls for cooking the sausage and onions and peppers until hot 1 to 2 minutes. It took about 8 or 9 minutes to get them hot in my wok. I've added this to my recipe box and it is definitely a keeper.

Cranberry Muffins

I made these for my family and they loved them. The only changes in the recipe was I used pure coconut oil in place of vegetable oil. I also put in a small ripe banana for added moisture and sweetness; not to mention I made it in cake and bar form instead of muffins and adjusted the timing and temperature. They freeze well and have a nice fresh taste after thawing.
