Deviled Eggs

I always try to wing deviled eggs and it never comes out quite right. Finally decided to go with a recipe and this one was PERFECT. Taste exactly like you want deviled eggs to taste. I could have eaten the whole dozen! Use dijon mustard (because that's all we had) and was still fab. Thank you!

Confetti Potato Pancakes

Delicious! Was looking for something to make when I discovered I had carrots, zucchini and potatoes just layign around and this was the perfect solution. I used a red onion which may have kicked things up a notch (regarding some reviews that it was bland) and did 2 garlic cloves instead of 1. So happy we have leftovers... will be looking forward to lunch at work tomorrow!

Kris' Lentil Sausage Soup

I was searching for a recipe that had lentils and crushed tomatoes (since we had a ton of both for some reason) and came across this one. So happy I did. Soooooo super delicious and so super easy to make. My SO kept saying how great it was too... he will pretty much eat whatever I put infront of him, but he doesn't always rave. He raved this time. Oh, and our 16 mo old who turns her face to everything but mini ravioli these days was inhaling it. Yipee! Luckily this recipe makes a lot, so we'll be freezing some for the emergency no dinner nights. Thanks Kris!

Pumpkin Crisp

Just made this for a football party and everyone went crazy for it. I made something similar to it weeks ago - something from a box - and the store didn't have it anymore so I found this recipe. Everyone agreed this was WAAAAAAAY better than the box mix. I heard comments like, "This is like crack!" "I'm glad I didn't have this recipe when I was pregnant, I would have eaten the whole pan!" etc. I accidentally only bought 1/2 the pumpkin the recipe, but i made it anyway and put it in a 9x9 and it obviously turned out great. I might try to make this a little healthier next time - less butter and maybe splenda instead of suar??? and see if it's still just as good.

Salsa Chicken

OK, funny story about this recipe... I was sick so my BF offered to make it since it was super easy. I get home from work, go upstairs to change and he comes up 2 min later with a sad look on his face confessing he already "messed it up." He cut the chicken into chunks and dumped all the taco seasoning on it. At least he tried. The chucks actually worked out (no cutting as we sat infront of the TV to watch a movie), but we did have to wipe off a lot of the seasoning. We served it over brown rice and I think we might add kidney beans next time just to add some nutritional value. Such a yummy quick and easy recipe. Thank you so much! We will def make this again (and read the directions).

Peanut Sesame Chicken with Mushrooms

Super easy yummy recipe. Thank you. Used canned mushrooms and was fine. Might add some red pepper next time to make it hotter. Made with brown rice and was great with that.

Caramel Apple Pork Chops

Yeah, you could basically pour this sauce over lima beans and brussel sprouts and i would probably eat it. Sooooo good. Definitely double it. I breaded the pork - yummy! I also used bummel & brown (we never have real butter) and that worked just fine. Some of the onions from my salad got mixed in and that really added a interesting twist. Might think about adding them next time.

Thai Basil Rolls with Hoisin-Peanut Sauce

OMG! Sooooo good. Thai, Vietnamese whatever! It rocks. I made one alteration. After visiting 2 grocery stores and still not able to find the rice wraps and getting hungrier by the minute I decided big lettuce leafs would do and I was right. It was more of a wrap than a roll, but so so so so good (oh and pretty easy too!) Thanks.

Coconut Curry Fish

Loved it. Not sure how anyone could say this recipe was bland. I thought it was delicious and so did my bf, although he had to keep taking breaks because it was so spicy (i thought it was perfect!) I did add an extra garlic glove and didn't have tumeric :( Also didn't have corn starch, but didn't seem to make too much of a difference. Sauce was pretty thick without it. I cut pretty big chunks after reading some people had problems with it falling apart. That seemed to work and the fish (not chicken) was very good. Nice change. Def make it again. Oh, also used Lite coconut milk - thought that worked just fine too.

Country Chicken Supper

I found this recipe on a night where i emptied my fridge and was like, "what can i make with chicken, sweet potatoes, tomatoes and string beans?" I was really not expecting much and was just happy to use what I already had on hand. I was so surprised. When I dished myself up a plate I did my ususal, "OK, I'm not going to have 2nds." but I totally wanted more (and I did... i have no will power). I love this recipe because I didn't really have to measure anything - just tossed the ingredients in and simmered. I did do some things differently (not because I didn't trust the author) - I used sweet potatoes instead if regular (bc it's what I had) pre-marinated chicken breasts (new perdue product), fresh tomato (bc it's what i had), mahatma rice (ditto) and i added some cayenne. I think the cayenne and pre-marinated chicken added some extra flavor. I'll totally make it again. thank you!

Sweet Potato Casserole II

OK, I've used this recipe for the past like, 5 Thanksgivings so I thought I would write a review (not that this recipe needs another glowing one). Everyone goes coo coo for this casserole every year and I am now DEMANDED to make it :-). Of course I have to add marshmallows too, but it would certainly be amazing without them.

Fennel and Orange Salad

i just made this for thanksgiving and once the family got passed "what is fennel?" they seemed to really like it. The presentation is phenomenal (i added cranberries as someone suggested) and the colors were great. It was a great, healthy light salad that I'm sure I'll be making alot this summer.

Kielbasa Kale Stew

I just made this stew on a cloudy rainy saturday. It was PERFECT! I didn't really change much (OK, maybe I added extra kielbasa). I didn't have any garlic on hand (of course) so i through in a dash of garlic powder and that gave it some extra flavor. Otherwise it was just great as is.
