Chicken Scampi II

My hubby and I thought this was good but liked the scampi more with shrimp. I was hoping for something a little more like Olive Garden's since I can't eat there being gluten free; but it didn't seem to be quite what I was looking for. Other than the addition of white wine, peppers and onions I followed the recipe.

Nadine's Delicious Tilapia

Hubby didn't really like the breading-then again I used gluten free bread crumbs and made the addition of the Parmesan cheese as suggested. Instead of using flour I used cornstarch before breading. With the cornstarch the breading stuck awesomely!

Avocado Mango Salsa

Needed to make this for a large crowd so I made a test run for my hubby and I to try. It was yummy as written; however, I did make a couple of small changes when I made the larger batch. I scaled the cilantro down to a 'to taste' and used garlic salt to taste. Apparently I didn't make enough as this salsa was one of the first to get devoured. Thank you so much for the recipe!

Cake Balls

This really is very simple to make and only time consuming if you sit around and do nothing else while you are waiting on the cake to be ready. I made this with Betty Crocker Gluten Free cake mix, vanilla frosting and dipped it in chocolate. They are VERY sweet even for someone with a huge sweet tooth. I did the following: 1.Baked the cake following the instructions and let it cool for about 30 minutes. 2. Broke up the cake into crumbles and mixed in about a half a can of frosting (I figured too little was better than too much!) 3. Chilled the cake mix overnight. 4. Formed the balls of cake and placed lollipop sticks in them. 5. Froze the cake balls for about an hour and then dipped them in the Baker's Dipping Chocolate cups. Everything together probably only took an hour of hands on time with a delicious result.

Gluten-Free Peanut Butter Cookies

Tried these and my hubby and I still thought they were missing something. I read the reviews first and subbed 1/2 of the sugar for brown sugar, added vanilla and baking powder. These were chewy and had a great consistency!

Favorite Pot Roast

I used this recipe as a base and my pot roast came out wonderfully seasoned but a bit tough. I think if I'd left it to cook longer it would have been a bit better. My changes were as follows: instead of water I used 1/2 beef broth 1/2 mushroom stock; I added garlic and lightly garlic/celery salted the roast before searing. I also didn't cook the veges in with the roast since my hubby wanted mashed taters and honey glazed carrots. Overall very happy with the decision to use this recipe over another!

Easy Vodka Sauce

This was a great base to start with, I did use diced tomatoes instead of crushed and used an immersion blender to blend up the tomatoes. I also had to let this simmer much longer than listed so it would thicken up. Overall very good sauce.

Tex-Mex Turkey Soup

I made this with a few of my own changes (omitted the condensed soup, used a mexican seasoning blend instead of chili powder and added freshly roasted chili peppers). The recipe used as a base was VERY good!

Cranberry Relish with Grand Marnier® and Pecans

I used Triple Sec and the relish was pretty good. My hubby didn't like the pecans so I can only give it four stars. The juice created is pretty good though.

Peanut Butter Kiss Cookies

I also used the combination of three sugars and this recipe turned out awesome for me. Some of my cookies spread a little so I ate those instead of gifting them and they were delicious! This was perfect for me being gluten free!

Honey Chicken Stir-Fry

I give this recipe a solid 4 stars since I was able to use it as a good base for my own sauce. I didn't measure any of my ingredients but here is what I did: mixed minced ginger and honey added an equal part of Tamari (gluten free soy sauce) and a generous sprinkle of red pepper flakes. Salt and peppered the chicken before adding it to the hot oil and once chicken was almost done added minced garlic (the stuff in a jar) with a little juice to the chicken.Allowed the chicken to finish cooking and the garlic to simmer for a couple of minutes. Added steam fresh Asian mixed vegetables and the sauce after a couple of minutes. Mixed my cornstarch with additional Tamari until smooth added that to my stir fry and allowed it to boil and thicken for a minute or so...ended up being very good and well received by my hubby. Very very easy and quick!

Stove-Top Macaroni and Cheese

I had no problem with texture here and I used gluten free flour. You really have to whisk constantly and add the milk slowly. If you add it too quickly you not only run the risk of curdling the milk but also of leaving chunks of flour in the bottom. I used a mexican blend of cheese and it turned out yummy. It was too much cheese sauce for me but I also didn't use a whole package of gluten free pasta.

BBQ Glazed Homemade Meatballs

This recipe was very easy to adapt to my gluten free needs. Also, these were very easy to prepare and throw in the oven while doing other things. My only complaint was that they were slightly greasy, which could have been taken care of by baking on a broiler pan for about half the time then baking for the rest of the time in the sauce. Either way a very good recipe to use as a jumping off point.

Yummy Honey Chicken Kabobs

My husband and I loved this marinade! We used three chicken breasts and marinated the bell peppers and onions with the chicken. We also marinated overnight and added other vegetables before grilling. The result was DELICIOUS.
