Downeast Maine Pumpkin Bread

Excellent recipe! Like most I tweaked it a lot reducing sugar to less than 1 1/4 c. and vegetable oil to 1/2. I added 1/2 c. chocolate chips and 1/4 c. walnuts and 1 tsp. vanilla. The chips and walnuts were added frozen. I also used homemade pumpkin puree which was pretty watery, so I didn't add any water. The Funny thing is I used 3 double yolk eggs. It came out perfect in 55 minutes using two 8 x 4 loaf pans. I can't wait to try this in a bundt pan this Fall.

Chocolate Rum Balls I

I doubled this recipe and added another 1/2 c. of Capt. Morgan's spiced rum with an additional tablespoon of the light corn syrup...delicious with a glass of milk to warm you up on those cold nights. I like this recipe better than melting the semisweet chips. Also using gloves helped when forming into balls because the rum burns!
